Cookie Dough Protein Bar Recipe

A simple gluten free cookie dough protein bar recipe that doesn’t require any baking and is free from preservatives, artificial colours, flavourings and refined sugar. In other words, this is a very different protein bar to the one you would typically find at your local supermarket or supplement store.

I used to LOVE the cookie dough Quest bars, anyone else? I squirm as I write that because I feel sorry for my poor digestive system that had to try and absorb the bar and all 400 different ingredients and fake sugars. In my opinion, this is a much better and gut friendly alternative!

Despite being on a SIBO diet protocol, I couldn’t help but take a bite (pictured below) and I enjoyed every ounce of flavour that hit my mouth! Hopefully only two to three more months until I can loosen things up a bit, diet wise. The restriction is tough in the short term but it is definitely worth it to have a healthy and functioning gut/ digestive system.

We all loved sneaking in a bit of raw cookie dough as child right? I still eat it now and can’t get enough LOL. Well this is a much healthier version for you to try that is completely egg free and has a little hit of protein.

Ingredients for Cookie Dough Protein Bar Recipe

Happy Way Vegan Vanilla Protein Powder – discount code HAPPYBLONDE. This is still by far my favourite vegan protein powder to use in recipes and baking.

Naturally Sweet Stevia Blend – discount code BLONDE10. I buy all my sugar free supplies from this website. Check out the flavoured stevia drops while you’re shopping, they will take your morning coffee from drab to FAB!

Halo Sugar Keto Milk Chocolate – love this stuff! Clean ingredients, smooth, creamy chocolate taste but without the sugar! Alternatively, I often use a low sugar dark chocolate such as Lindt 85% Excellence blocks or the copy cat version from Aldi.

Almond meal – I always buy blanched almond meal, it tends to have a finer texture and is a lighter yellow shade whereas unblanched almond meal will have a darker colour to it.

Coconut flour – I usually buy the Macro organic brand from Woolworths

  • 70g natural peanut butter (slightly more than 1/4 cup)
  • 2 tbsp maple syrup
  • 1 tbsp almond milk
  • 30g vegan vanilla protein powder
  • 2 tbsp almond meal
  • 1 tbsp coconut flour
  • 1 tbsp stevia
  • 1/4 tsp cinnamon (optional)
  • 1/4 tsp salt (omit if your nut butter is already salted)
  • 40g keto milk chocolate

How to make this Cookie Dough Protein Bar Recipe

  • Combine peanut butter, maple syrup and almond milk until smooth.
  • Add protein powder, almond meal, coconut flour, stevia, cinnamon and salt.
  • Mix well. Chop chocolate into pieces and press into the mixture.
  • Press the dough into a mini lined loaf tin or container. Refrigerate for 1 hour before slicing into squares.
