White Chocolate Macadamia Nut Baked Oatmeal

White chocolate macadamia nut cookies were probably my favorite flavor of cookies growing up, especially the subway cookies. We would go to subway quite often when I was younger after soccer games, practice, or when traveling. I love how crisp they were on the edges and chewy on the inside. I was inspired by this cookie flavor to make a baked oatmeal variety. This recipe is not only super simple and will take no time to whip up, but it taste amazing. I have loved my monster baked oatmeal and berry baked oatmeal so much for easy breakfast that now I want to try making a variety of baked oatmeal flavors.

Ingredients

You could not get an easier breakfast that will take you less then 10 minutes to throw together. Then when you add in the white chocolate macadamia nut flavor it takes baked oatmeal to the next level. The recipe of course starts with a base of oats. Since there is no added sugar in this recipe, I used a sugar free white chocolate pudding mix packet. It adds sweetness while also adding additional white chocolate flavor. Then I also added a vanilla protein powder. This ups the protein to make the breakfast more filling, while also providing the base with a sweet vanilla flavor. I used non dairy milk to make this recipe vegan friendly, and some ground flaxseed to bind the batter together while also adding some nutrients. Then the best part is the addition of the white chocolate and macadamia nuts. The creamy sweetness of the white chocolate mixed with the salty macadamia nuts is just a match made in heaven. The baked oatmeal taste so decadent yet it is such a nutritional breakfast.

I love serving this oatmeal with a little additional cashew butter, but you could also serve it with some berries, a banana, or paired with yogurt. It is such a wonderful freezer friendly meal, that I look forward to every morning. It really does bring back the memories of those delicious subway cookies I had when I was young. So if you have 10 minutes, throw this baked oatmeal together and get it in the oven so you have an easy and delicious breakfast all week long!

Baked oatmeal with all the flavors of a white chocolate macadamia nut cookie

Cook Time 30 minutes

Ingredients

Instructions

  • Preheat oven to 350 and line an 8x8 baking sheet with parchment paper
  • Combine all the ingredients in a large bowl except for the white chocolate and macadamia nuts. Stir until everything is combined
  • Stir in the white chocolate and nuts and then pour in the baking sheet. Spread so it is even and place in the oven
  • Bake for 30 minutes or until set
  • Let cool for a few minutes before cutting into 9 slices
  • Keeps in the fridge for a few days or wrap in a plastic wrap and store in the freezer for up to 3 months
