Quick Pickled Red Onions

My Quick Pickled Red Onions will switch up my normal meal recipes. This amazing recipe is a great garnish! These Pickled Red Onions are such an amazing accompaniment to a lot of dinners and platters. Adding this recipe to The Happy Haandi has been on my mind to share for quite a while. The recipe is super quick and user-friendly and it only takes a few spices. Don’t forget your vinegar and onions (duh). These little guys pack an awesome, crisp punch of flavor to a lot of classic dinner and lunch options. Pickled Onions go great on salads, burgers, TACOS, and any other places you’d like to pack a pickled punch!

The Quick Pickled Red Onions

As I said above, this can’t get much easier and when I can manage to plan things just right, these pickled onions can be made for your dinner the night of!

We start by chopping your red onion. Be sure to slice them nice and thin.

Next, in a small saucepan, we’ll add vinegar, honey, red chili flakes, and a pinch of salt. Bring all of this to a boil and ensure the honey is dissolved before removing the pan from the heat.

Boiling the vinegar and spices is a crucial step.

Now, you can pack your onions into a mason jar and keep them packed tight! I like using these reusable mason jar lids. Finally, pour your vinegar mixture over the onions until the onions are fully covered. Be sure none of the onions float up (I’ve sometimes rested a fork over top to help keep them down). Then, rest a lid over top but be sure not to screw it down. This will allow the whole thing some time to cool.

Once they’ve cooled, they’re good to go! Enjoy them that evening or close up your jar and keep them in the fridge, They should keep for about a week!

Ingredients
  

  • 1 small Purple Onion
  • 1.5 cups Vinegar
  • 2 cloves Garlic
  • 1.5 tsp Red Chili Pepper Flakes
  • 1 tsp Honey
  • Salt (just a pinch)

Instructions
 

For the Pickled Onions:

  • First, cut up your onion into thin slices and add them into a heat-safe jar with a lid. I really like mason jars for this.
  • Next, we will start on our vinegar. In a small saucepan, add the vinegar, chili pepper flakes, honey, and salt. Bring the mixture to a boil. Once it's boiled and the honey is dissolved (might require some stirring), remove it from the heat.
  • Pour the vinegar mixture into the jar, ensuring the onions are completely covered.
  • Allow to cool for a minimum of 30 minutes, then enjoy!
