Chocolate Chickpea Fudge Recipe

Ever since we created our Matcha And Hazelnut Fudge recipe we’ve been obsessed with these creamy and delicious sweet treats! We knew if we use a chickpeas as a base for our new recipe, we won’t get the super creamy texture, but anyway we gave it a try. Our Chocolate Chickpea Fudge is chewy, perfectly sweet, soft, and absolutely amazing vegan dessert!

As we mentioned chickpea fudge is not the creamiest, but it has very rich chocolate and nutty flavor which makes it irresistible. 🙂 The best thing about this recipe is that it doesn’t involve baking or cooking. Everything can be done in a food processor. Super simple!
Chocolate Chickpea Fudge
These fudge cubes are soft and they melt in your mouth leaving behind a smile and an unforgettable flavor. To reach more firm texture use less almond butter. For us this texture was perfect!

Vegan Chocolate Recipe

INGREDIENTS

  • 1 1/3 cup (220g) cooked chickpeas
  • 1/2 cup (125g) almond butter
  • about 1/4 cup (80g) coconut syrup
  • 4 tablespoons cacao powder
  • 1 cup (about 110g) almond flour
  • 1/2 cup (75g) roasted almonds

INSTRUCTIONS

  • Line 8 inch square baking dish with parchment paper and set aside.
  • Add chickpeas, coconut syrup, and almond butter into a food processor and process until evenly combined, and creamy texture is form. It is quite a wet dough but don’t worry. Transfer the mixture into the large mixing bowl. Add cacao powder and almond flour. Stir everything well until dough start to form. The dough will be wet but not runny. Add roasted almonds and evenly distribute it into the dough.
  • Transfer everything into a baking dish and press with your fingers into a flat layer. Refrigerate for at least 4 hours or overnight. 
  • Cut into cubes or squares. Serve and enjoy your delicious Chocolate Chickpea Fudge.

NOTES

  • We got 18 fudge cubes from this mixture.
