One of my favorite things is the vibe in the air when you get back from spring break. When you leave for your vacay, the sky is steely and grey, and there is a tang of winter weather infecting every puff of freezing wind. Last year’s leaves molder in the corners of the yard, and the snow melts into clumps of mud. THEN, you get back from spring break, and all of a sudden the world is beautiful once again. There are crocuses peaking through the hedgerow. The sun has bloomed from weak and watery to bold and warming. You push aside your slacks and boots and find your sundresses waiting for you in the back of the closet. These Lemon Blueberry Sandwich Cookies mirror the newfound brightness that I hope you are all feeling as spring peeks around the corner, beckoning us towards summer.

In other news, I am officially done with pants. This is a full boycott. No jeans, no khakis. No trousers, slacks, leggings, clamdiggers, breeches, culottes, gauchos, or jeggings. My legs require the freedom of SUMMER. Skirts and shorts for the win.

Lemon and blueberry. It’s just such a good combination. The tart citrus just works so well with the sweet blueberry. I have used these together before in my Blueberry Layer Cake with Lemonade Frosting, but I wanted to do something simple and quick. These little sandwiches can be thrown together in just a few minutes and are the perfect treat for the new spring weather!

I’m also supposed to be paying attention to pinterest trends and whatnot, and sandwich cookies and whoopie pies are all the rage at the moment. However, rest assured that these cookies are significantly less artery-clogging than whoopie pies. I have a very vivid memory from my childhood that basically prohibits me from making whoopie pies ever again. My parents and I went to dinner with some family friends and were served chocolate whoopie pies for dessert, and LOVED THEM. I mean, of course we did. They’re basically straight butter and sugar disguised as actual food. My mom asked for the recipe. We got home, a few days passed, and she decided she was going to make them. She pulled out the recipe, scanned the ingredients, and her eyes got wiiiide. Apparently they were the nutritional equivalent of a McDonald’s supersized meal.

So, no whoopie pies for the Cassady family. HOWEVER, these cookies are not quite as much of a calorie bomb.

I mean. They’re not a salad. Let’s not kid ourselves. But they have fruit.

Lemon and Blueberry Sandwich Cookies: the elements.

I’m still really enjoying my newest toy, my cookie scooper shovel thingy. When making a sandwich cookie, if you are looking for “perfection” (whatever that means) you might want to consider using one of these handy little scoops. Two reasons. 1)The scoopy thingies are cute. (That’s the important one to be honest.) 2) It makes every cookie dough blob the same size. So, when you go to sandwich them together, the two halves will match. Woot.

The dough is simple, but it should produce a cookie with noticeable lemon flavor, a tender texture, and those cute little powdered sugar crinkles on top. Who doesn’t love those?

I also have been digging making homemade jam lately. I made really yummy raspberry jam for my brownie cookie sandwiches, so it seemed logical to go the homemade route for this blueberry filling as well. Also, I had bought blueberries to eat for lunches this week and then spent the entire week eating Easter candy instead, so I needed to use up my fresh blueberries before they went bad.

Don’t judge. Candy is good.

These cookies are ridiculously simple. Mix up your dough. If you want to be cool like me, grate some of your skin instead of the lemons and then do some cussing and drinking of wine. Roll the dough in some powdered sugar. Bake them while you boil some sugar and berries. Let everything cool, assemble them and eat them. I almost feel guilty making this a blog post, but my bestie assures me that easy recipes are wanted by the masses, so voila.

Also, they taste really good, and they have fruit so I can blissfully pretend they are healthy.

Ingredients

  • For the cookie batter
  • 2.5 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter melted and cooled

  • 1 cup granulated sugar

  • 2 large eggs

  • Juice of one lemon

  • Zest of four lemons

  • 1 teaspoon vanilla extract

  • Yellow food coloring (optional)

  • ¼ cup powdered sugar for coating

  • For the blueberry filling:
  • 1 cup blueberries

  • ⅔ cup granulated sugar

  • Juice of one lemon

Directions

  • Preheat your oven to 350 degrees F and line a large baking tray with parchment paper.
  • Combine the melted butter and sugar in a large mixing bowl, whisk to combine. Add the eggs, one at a time, and salt, whisk until smooth. Add the lemon zest, vanilla, and lemon juice, whisk. Fold in the dry ingredients and mix until combined.
  • Scoop out the cookie dough in 2 tablespoon balls and roll individually in the powdered sugar. Place the cookie dough lumps on your cookie sheet and flatten slightly with either the pads of your fingers or the bottom of a drinking glass or measuring cup. Bake for 8-9 minutes or until just set. Cool on a wire rack.
  • While your cookies are baking, make your blueberry jam. Combine all ingredients in a saucepan over medium high heat. Cook, stirring occasionally, until it reaches 220 degrees F. Remove from the heat, pour in a bowl or jar, and place in the freezer for one hour.
  • Sandwich your cookies, filling generously with jam. Enjoy!
