  If you’ve been searching for low carb eggplant recipes, you MUST try this delicious Eggplant Carbonara!

So, you’re in the mood for an  Italian eggplant dish and you’ve been searching the web for low carb eggplant recipes,  but you’re not really “feeling” the old tried and true eggplant parm.  Don’t fret! You’re going to love this eggplant carbonara. 

This post is all about showing you how to create a delicious Low Carb and Keto Italian pasta dish in no time!

Not only can dinner be ready in less than 45 minutes, but it’s super simple to make, uses just a handful of ingredients and it’s out of this world amazing!

So how about we hop in the kitchen and throw this awesome meal together?

Eggplant Carbonara- Low Carb & Keto Friendly

 

Eggplants are incredibly nutrient dense and pack a ton of vitamins and minerals. They are lower in carbs, high in fiber, manganese, potassium and folate. However, if you’re not aware, eggplant is part of the nightshade family just like tomatoes, peppers and chilies. So if you’re someone who suffers with autoimmune conditions like fibromyalgia, rheumatoid arthritis and lupus, then you may want to steer clear if nightshades give you inflammation. 

Low Carb Eggplant Recipes

I’ll be honest, eggplant was never a veggie that I was truly interested in.  However, since I am living a  low carb and keto way of eating, I’ve recently started experimenting with it.  And I love it! Check out our Low Carb & Keto Refried Beans with eggplant.

With that being said, yes eggplant is totally low carb and keto friendly and this carbonara dish is too.   

Instead of using regular wheat pasta we’re using a keto friendly noodle replacement. Other than that, this carbonara recipe doesn’t really differ from an authentic carbonara and that’s truly the beauty of it. 

LOW CARB EGGPLANT RECIPES PARMESAN

Eggplant Carbonara Ingredients

  • Eggplant– you will only need to use one medium (regular?) sized eggplant. 
  • Pancetta– If you live in an area that doesn’t have a neighborhood deli, you can definitely find pancetta at your local grocery store in the deli section.  If you do not like pancetta or you’re a purest you can use guanciale which is the original meat choice.  Or you can simply use thick cut bacon. 
  • Parmigiano Reggiano– If you’re on a budget this may be a splurge. However, if you have a Costco membership you can totally get a wedge for super cheap! Pro tip, save the rind and add to future homemade marinara sauces. I’d also strongly suggest shredding your own as it melts easier and it doesn’t have any added ingredients. 
  • Low Carb or Keto Noodles– We are using our absolute favorite noodle sub- Healthy Noodle. This can be bought at Costco. However, if your Costco doesn’t have them, you can sub with Miracle Noodles or even zoodles. 
  • Yellow Onion– Just a bit for some delicious flavor.
  • Fresh Garlic– Please dice your own instead of using the pre-chopped garlic you can buy from a jar. The flavor is so much better. 
  • Eggs– Guess what? This is our sauce. If you can, try to go with pasture raised eggs here. You will not regret it.
  • Fresh Parsley– Fresh parsley is super inexpensive and adds a ton of flavor to this already beautiful dish.
  • Salt and Pepper– Always always should be added to dishes. 

Prepping Our Low Carb Eggplant Carbonara Recipe Ingredients

The very first thing you’ll want to do is pre-heat your oven. 

Next slice up the eggplant and then place on a parchment-lined baking sheet and sprinkle liberally with salt.  What this does is removes a lot of the moisture as well as some of the bitterness.  You will only need to sweat the eggplant for 10-15 minutes. With a paper towel, remove the excess moisture, but do not remove the salt. This adds lots of flavor.

While the oven pre-heats and the eggplant sweats, you’ll dice the onion and garlic, as well as shred the parmesan cheese, roughly chop the parsley and dice your pancetta.

To a medium/small bowl add your two whole eggs and two egg yolks.  To your eggs you’ll add the shredded parmesan, parsley, salt, ground black pepper and whisk. 

At this time your eggplant should be done and out of your oven cooling.  Carefully remove, dice and set to the side.  If you’re using low carb noodles that need to be rinsed go ahead and do this now.

Low Carb Eggplant Carbonara-Ready Set Go!

This is the part of the meal (besides eating it) that is going to go very quickly.  The first thing we’re going to do is pre-heat our sauté pan on medium to medium low heat. If you have a deep sauté pan I’d suggest you use that because all our ingredients will be added to it. 

To our pre-heated deep sauté pan we’ll add our pancetta. You will continue to cook your pancetta (or whatever meat you’re using) until most of the fat is rendered. Once pancetta is almost completely cooked you’ll add the onion and continue stirring until translucent.  Now that our onion is translucent, add the chopped garlic, stir and then add the eggplant. Mix all the ingredients, turn off your heat and add your noodles and a nice pinch of black pepper. You will continue to toss until noodles are completely coated and have been heated through.

You may think it’s crazy to turn off the heat and then add our room temp noodles, but we’ll be adding out egg mixture to the pan and you DO NOT want your heat on…unless you want scrambled egg and eggplant pasta.  Trust me, the egg will cook with the residual heat and will become a delicious creamy sauce.

Once you add your egg mixture you will continuously toss all the ingredients until egg mixture thickens and becomes creamy.  Make sure to taste and add more salt and pepper if needed. Top with more fresh parsley and shaved Parmigiano Reggiano and devour!

LOW CARB BAKED EGGPLANT RECIPES

Eggplant Carbonara- Low Carb & Keto Friendly

Cook Time: 10 minutes
Total Time: 40 minutes

Super delicious creamy eggplant carbonara with crispy pancetta and topped with Parmigiano Reggiano.

Ingredients

  • 1 eggplant (1.5 cups diced)
  • 2 whole eggs + 2 egg yolks
  • 3/4 cup shredded Parmigiano Reggiano
  • 5 oz pancetta
  • 2 packs Healthy Noodle
  • 1 oz diced yellow onion
  • 3 cloves garlic
  • 1 1/2 tbsp fresh parsley
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

Pre-heat oven to 450°F and slice eggplant into medallions, place on parchment-lined baking sheet, sprinkle with salt and set to the side to sweat for 10-15 minutes. Once 15 minutes are up dab excess moisture with paper towel, but do not remove salt and place in oven for 15 minutes.

While eggplant is sweating and roasting, you'll prep the rest of your ingredients. Dice onion and garlic, shred parmesan cheese, roughly chop parsley, dice pancetta, and rinse noodles (if needed).

Crack your eggs into a medium sized bowl. Add cheese, parsley, salt, black pepper and whisk.

At this time the eggplant should be done roasting and cooling so you can now dice the eggplant as well.

Pre-heat a deep sauté pan and add the diced pancetta. Cook pancetta until most of the fat is rendered. Next add the diced onion and cook until translucent. Now that onion is translucent, add chopped garlic and the eggplant. Stir well and turn off heat and add room temp noodles.

Toss all ingredients well and add a pinch of black pepper. Once noodles are up to temp add the egg mixture and continuously toss all ingredients until egg mixture thickens and becomes creamy. It is really important to continue tossing the pasta until creamy. This will only take about a minute. Make sure to taste and add more salt and pepper if needed.

Top with more fresh parsley and shaved Parmigiano Reggiano and serve immediately!
