Our Low Carb Egg Roll In A Bowl With Ground Pork is the absolute BEST busy week night dinner. 

Our family adores egg roll in a bowl. The sheer ease of making an awesome dinner in literally 20 minutes is totally my jam. I’m sure it’s yours too.

If you’re ever strapped for time or you have literally zero idea what you’re going to make for dinner, then this Low Carb Egg Roll In A Bowl With Ground Pork is for you!

Just like you, I don’t  have a ton of time throughout my day, so having a meal that is delicious, easy , quick and super inexpensive seriously saves my life! 

This post is all about making a high protein, low carb delicious dinner you and your whole family will love. 

Low Carb Egg Roll In A Bowl- With Ground Pork

 

If you’ve been on a low carb or keto diet for any amount of time, you’ve definitely heard of egg roll in a bowl. Wanna know why? Because it is so freaking delicious. There are different variations of egg roll in a bowl using ground beef, turkey like our Ground Turkey Egg Roll In A Bowl and even ground chicken.  All of these variations are awesome, but my all time favorite is using ground pork. 

If you’re craving an Asian inspired meal that’s low carb, takes barely any time to put together, super inexpensive and only has 10 ingredients then this is sure to be your go to recipe.

Egg Roll In A Bowl Ingredients

  • Ground Pork/Pork Sausage– You can use either.  I prefer pork sausage because it has a ton of flavor and fat, but you can totally use ground pork to control your fat content and flavors. 
  • Coleslaw Mix– We have used premade coleslaw mix in a bag. Feel free to shred your own cabbage.
  • Avocado Oil– We’re only using a tiny bit to cook up our onion.
  • Coconut Aminos–  This is a soy free “soy sauce”.  This is a personal preference. You can definitely use regular soy sauce if you do not have any issues with soy products. 
  • Toasted Sesame Oil– A little goes a long way. If you are unable to find “toasted”, regular sesame oil works just fine.
  • Yellow Onion– We’re sautéing a small amount for added flavor.
  • Whole Eggs– This is totally optional. Usually egg roll in a bowl does not have eggs in it. However, I really like the added protein and it also helps to fill you up. We’re using our absolute favorite pasture raised eggs, but you can use whichever brand you prefer.
  • Fresh Garlic– Add as much or as little as you like. We love garlic so are using what I think is a moderate amount.  If you do not have fresh garlic, you can use garlic powder, but I highly suggest using the fresh stuff.
  • Fresh Ginger– A small amount of ginger adds an awesome punch of fresh flavor.  Same suggestion as the garlic, try to spring for the fresh stuff.
  • Dried Chili Flakes– Optional, but adds a tiny bit of heat that really amps up the flavor.
  • Black Pepper– Because this is a must.

You will notice that I did not list any salt in the ingredients list. The reason for this is there is a ton of salt in the “soy sauce” and if you’re using pork sausage there is salt already added to that as well.   As always add seasonings according to your taste and if you feel you need some salt, then go ahead and add it.

Making Our Low Carb Egg Roll In A Bowl- With Ground Pork

Seriously, you guys are going to be so excited to learn just how easy it is to throw this meal together.  The only ingredients that need to be prepped prior to cooking are the onion, garlic and ginger and that literally takes 1 minute. 

  • Now that the onion and garlic are diced and the ginger has been grated, heat a large sauté pan on medium heat and add 1 tablespoon of avocado oil.  Once to temp add the diced onion and stir until translucent and then add your ground pork. 
  • Break up your ground pork and once fully cooked add the black pepper, red chili flakes, garlic and ginger.  You will continue to stir so you do not burn your garlic or ginger. 
  • Once your garlic and ginger are fragrant (about 1 minute) add the bag off coleslaw mix, coconut aminos (or soy sauce) and the toasted sesame oil. Mix very well, cover pan with lid and turn heat to medium low.  Cook covered for 5 minutes. 

The reason why we’re covering our pan with a lid is to steam the coleslaw mix. This only takes 5 minutes. 

  • While our cabbage is steaming you’ll crack your eggs and scramble them.  Once the 5 minutes are up, remove the pan lid and stir the egg roll mixture. Now create a well in the center of the mixture and add the scrambled eggs. You will gently stir the eggs until they start to set. Once eggs start to set you will then incorporate all the ingredients.  Turn off heat and continue to stir until eggs are fully cooked.

At this time you should definitely taste your dish and add more spice or salt if needed. 

This dish is a full meal, so feel free to serve as is or topped with some green onion and sriracha!

Low Carb Egg Roll In A Bowl- With Ground Pork

Super delicious and flavorful Asian inspired low carb egg roll in a bowl made with ground pork sausage.

Ingredients

  • 1 lb ground pork sausage
  • 16 oz package coleslaw mix
  • 1 tbsp avocado oil
  • 1/4 cup coconut aminos (or soy sauce)
  • 1 tbsp toasted sesame oil
  • 1 oz diced yellow onion
  • 4 large eggs
  • 3 cloves garlic
  • 2 tsp gresh ginger
  • 1/8 tsp red chili flakes
  • 1 tsp ground black pepper

Instructions

Dice onion, garlic, and grate ginger.

While our cabbage is steaming you'll crack your eggs and scramble them.  Once the 5 minutes are up, remove the pan lid and stir the egg roll mixture. Now create a well in the center of the mixture and add the scrambled eggs. You will gently stir the eggs until they start to set. Once eggs start to set you will then incorporate all the ingredients.  Turn off heat and continue to stir until eggs are fully cooked.
