Having a Low Carb Breakfast On The Go is essential when you have busy mornings and you’re trying to stay on track with your low carb lifestyle. 

If your family is like mine, then you LOVE a sweet breakfast.  My absolute favorite “carb-a-licious” breakfast meal is French toast and this recipe is so reminiscent of that.  Seriously, it doesn’t disappoint. 

So if you’re finding it hard to get breakfast ready before you run out the door, or if you’re tired of eggs and bacon, then you should definitely check out this recipe.

So let’s get some French toast sticks prepped and ready to go for your super busy mornings!

 

French Toast Sticks- Low Carb Breakfast On The Go

Usually when we’re looking up any low carb or keto recipes, the very first options that come up are eggs and bacon or eggs and sausage. Now don’t get me wrong, I love eggs and bacon.  However, after a while if can get kind of boring, right?  Plus you just start to crave something a little sweet.  

Here comes the Low Carb French Toast.  Yes, you’ll have to make your own “bread” loaf, but it is seriously crazy easy.  You’ll literally add everything to a blender or food processor, blitz , pour into a loaf pan and bake.  You really can’t get much easier than that.

One of the beautiful things about this recipe is that you can most definitely double or even triple this recipe, make them into French toast sticks and freeze them for many breakfasts to come. 

How Is This Breakfast On The Go?

Well, I’m glad you asked.  Usually when eating a plate of French toast, you have a ton of syrup and butter and most likely need a knife and a fork. However, with this recipe we’re incorporating so much flavor into the loaf itself, that you won’t even need any toppings or dipping sauces (unless you want to… which I’m totally on board with) and it can easily be eaten on your commute to work.  

If you have kids they can even eat their breakfast in the car on the way to school or even while their walking to school. It’s pretty perfect actually.  These French toast sticks are so “on the go” friendly, that they’re even delicious when cold! 

Low Carb Breakfast On The Go- French Toast Sticks Ingredients

  • Cream Cheese- This recipe calls for a brick of cream cheese which is 8 ounces. We really like the taste of the Philadelphia brand, but you can totally use whichever low carb brand you enjoy.
  • Unsalted Butter- This is absolutely key. Do NOT use salted butter. No one wants super salty French toast. 
  • Eggs- lots of eggs. This recipe calls for 8 eggs, but it definitely does not taste “eggy”. Our absolute favorite eggs are the Happy Eggs brand that are pasture raised. They have the most beautiful orange yolk and really do taste awesome. I won’t lie and say they’re inexpensive, because they’re not. So if this is something that does not fit in your budget then you should absolutely get whatever you like and can afford. 
  • Vanilla Extract- We love vanilla extract (not imitation) when making French toast and feel it’s a necessity. 
  • Maple Extract- This is what adds a TON of flavor to our French toast sticks!
  • Ground Cinnamon- I mean… you obviously have to add cinnamon to French toast.
  • Ground Nutmeg- I love using nutmeg when making low carb French toast. It adds that beautiful flavor that you get from a really delicious bread pudding or custard.
  • Granulated Monkfruit Sweetener- We prefer the Lakanto Monkfruit brand, but you can use whichever low carb sugar substitute you have. This all depends on taste.

LOW CARB LOW CALORIE BREAKFAST ON THE GO

Putting Together Our Low Carb Breakfast On The Go- French Toast Sticks

Firstly, I want you to understand that this recipe will absolutely have to be made the night before.  The previous night this is what you’ll do:

  • Preheat your oven to 350°F.
  • In a microwave safe bowl, add your brick of cream cheese and the 8 tbsp of butter and place in the microwave and heat at 30 second intervals until butter is melted and cream cheese is completely softened. 
  • While the butter and cream cheese is heating in the microwave, grab your blender or food processor and add your eggs, cinnamon, vanilla extract, sugar, nutmeg and maple extract and once the cream cheese and butter are ready add them as well.  You’ll then blitz until the whole mixture is creamy and incorporated. 
  • Grease two loaf pans and then add a parchment paper sling to each.  Carefully pour half the batter into each loaf pan and place in the oven. You will cook for 30-40 minutes. I would suggest checking on them at the 30 minute mark.  You’ll only need to shake the loaf pans to see if the mixture is set. 
  • Once done, allow the loaves to rest for 10 minutes then remove loaves, slice either horizontally or vertically.  This will really depend on your preference.
  • Preheat a pan on medium heat, add 1 tbsp of butter to the pan, allow to melt and then add French toast sticks and sear on both sides. This should take about 5 minutes, but will depend on how “crispy” you’d like them.

LOW CARB HIGH FAT BREAKFAST ON THE GO

 

 

You can absolutely eat as is for an awesome on the go breakfast, or even add a side of berry compote or sugar free syrup to the side if you want to dip them into something. Otherwise, if you have time you can serve on a plate with warm berry compote, sugar free powdered sugar and even whipped cream!

LOW CARB KETO BREAKFAST ON THE GO

French Toast Sticks- Low Carb Breakfast On The Go

Prep Time: 5 minutes
Cook Time: 40 minutes
Total Time: 45 minutes

These delectably sweet French toast sticks are the perfect on the go breakfast that's Low Carb and Keto

Ingredients

  • 8 ounces cream cheese
  • 8 tbsp unsalted butter + 1 tbsp to crisp French toast sticks
  • 8 large eggs
  • 1 tsp vanilla extract
  • 1 tsp maple extract
  • 2 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup Monkfruit sweetener

Instructions

Preheat your oven to 350°F.
