Healthier Traditional Easter Hot Cross Buns

Hot Cross buns are an Easter staple, and no wonder why. These spiced sweet buns studded with raisins are quite delicious. They are so good on their own or served with butter and honey. I prepared them in a healthier version, and they still tasted as good as the original.

Ingredients

For the Dough

  • ¾ cup Warm skimmed milk
  • 1 tsp Brown sugar
  • 12 g Yeast
  • ¼ cup Butter
  • 1 Egg
  • ½ cup Brown sugar
  • Vanilla
  • cup Wholemeal flour
  • 1 tbsp Cinnamon
  • ½ tsp nutmeg
  • tsp Salt
  • ¾ cup Raisins
  • 1 cup Boiled water

For the Crosses

  • 5 tbsp Plain flour
  • 6 tbsp Water

For the Egg Wash

  • 1 Egg beaten
  • 1 tsp Water

Instructions

  • For plumping the raisins: add the raisins in a bowl, and combine with boiled water. Let sit for 10 min then drain well and set aside.

  • For preparing the yeast mixture: Combine the warm milk with sugar and sprinkle the yeast on top. Stir and let sit at room temp until foamy (around 10 min).

  • In a large bowl, Start by whisking the sugar and butter together.

  • Beat in the egg and vanilla extract on high speed until combined.

  • Add in the yeast mixture and beat again.
    Using the dough hook attachment mix in the flour, cinnamon, nutmeg, salt. Knead until smooth.

  • Add in the the plumped raisins & form the dough into a ball.
    Cover with a towel and leave to rise in a warm place for 1 hour or until doubled in volume.

  • Turn dough out onto a silicon mat or a lightly floured surface and cut into 12 equal pieces.

  • Shape dough into buns and transfer to a greased baking pan. Cover again with a towel and let them sit in a warm place for around half an hour.

  • Preheat oven to 200°C.
    Score a cross in the top of each bun with a sharp knife. Brush the buns generously with egg wash.

  • For preparing the plain flour paste: Mix the plain flour with a tbsp of water at a time to a thick paste.
    Pipe crosses on the buns in the cuts you made using a a silicon piping pen or a pastry bag.

  • Bake the buns for around 15 minutes or until golden.
