Caesar dressing is such a classic, and this recipe has become my go-to for making it quickly at home.

Prior to landing on this combination, I used a cashew-based Caesar dressing recipe that tasted pretty good, but required the blender or food processor and was kind of a production. No wonder I didn’t make it very often!

In contrast, I’ve made this at least six times so far this year. And, it’s a bit healthier than some other Caesar dressings, so that’s nice, too. 🙂

Caesar Dressing with Lime Juice

You might be skeptical of lime juice in Caesar dressing. I say, don’t knock it til you try it! While lemon is more traditional in such a dressing, lime provides the same citrus bite with a subtle something extra.

This is very much inspired by the kale Caesar salad served at Sweetgreen, which is what I order 100% of the time. Their dressing definitely has that je ne sais quoi, and I did a little research and found out it’s lime!

Yes, you can sub lemon juice if you prefer. But I encourage you to try it as written at some point: you might be a convert!

Other Ingredients

Here’s the rest of what you will need: Greek yogurt, Parmesan, Worcestershire sauce, anchovy paste, Dijon mustard, garlic powder, salt, and pepper.

Do I really need anchovy paste?

I totally get that it might be a pain to buy anchovy paste for this dressing, since it’s probably not something you use a lot otherwise. For what it’s worth, you buy it in a little tube, which lasts an eternity in the fridge, and I do find it worth keeping on hand just for this dressing.

However, you can leave it out and still have a tasty dressing. Taste the finished product and if it’s missing a little something, try adding another 1/2 teaspoon Worcestershire (or more!) to replace some of the salty, umami flavor that might be lacking.

How To Store It

This recipe makes about 1 cup of dressing, which I find to be enough for about 2 large family-sized salads, or more if I’m just using it for quick lunch or meal prep.

Store dressing in a mason jar or another airtight container in the fridge, and it will keep well for up to 1 week. Lime Caesar doesn’t keep as long as some other dressings, because of all the dairy. It will separate out a bit — this is normal. Just give the jar a vigorous shake before serving.

Lime Caesar Dressing

This is a fantastic healthier homemade salad dressing, and a cinch to whisk together in no time.

Ingredients

  • 1/2 cup plain Greek yogurt whole milk or non-fat is fine
  • 1/2 cup finely-grated Parmesan cheese
  • 3-4 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon anchovy paste
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 8-10 cranks fresh-ground black pepper
  • 1 and 1/2 tablespoons water

Instructions

  • Combine the yogurt, Parmesan, 3 tablespoons of the lime juice, olive oil, Worcestershire sauce, anchovy paste, mustard, garlic powder, sea salt, and pepper in a small mixing bowl. Whisk until smooth.
  • Taste; add the remaining 1 tablespoon lime juice if you prefer the dressing to have a little more bite. Add water a little bit at a time to thin out the dressing to your desired consistency. Whisk again until very smooth, and enjoy.
  • Any extra can be stored in the fridge in a tightly-sealed jar for up to 1 week. Shake well to recombine before serving.

Notes

  • Citrus: Yes, you can sub lemon juice if you like! But try the lime and you might be a convert. 🙂
  • Anchovy Paste: Adds a signature flavor but can be left out if needed! If you skip it, taste the finished dressing; if it’s missing a little something, try adding another 1/2 teaspoon Worcestershire to replace some of the salty, umami flavor.
