WHAT INGREDIENTS DO WE NEED FOR THIS RECIPE?

The long list of ingredients to make morning glory muffins might be a little overwhelming but they are so easy to make. This recipe uses all the odds and ends for your refrigerator.They make a glorious start to your day. Yes ! These muffins tastes like a carrot cake and apple spice muffin in a single bite.

The list of ingredients and their variations are as below:

    • Whole wheat or All purpose flour : Use a mix of both if desired.
    • Butter : Replace with any oil of choice.
    • Shredded Carrots : Shreded carrots adds nice taste, moisture,use a box grater/food processor to shred carrots.
    • Shredded Apples : Use any kind of red ones, prefebaly gala apples, apples add moisture and sweetness to the muffins.
    • Eggs : Replace with flax egg helps to bind.
    • Brown Sugar: Use Coconut sugar ( add half the quantity)
    • Honey: adds delicious flavor use pure maple syrup instead.
    • Orange juice : fresh orange juice brightens and adds a nice flavor substitute with apple , pineapple or any fruit juice or milk.
    • Orange Zest : elevates the taste of these muffins to next level do not skip unless you really don’t the taste of orange.
    • Chopped Pecans : These add good fat and fiber to the recipe, replace with chopped walnuts.
    • Applesauce : preferbaly unsweetned, let’s you to reduce the oil/butter in the recipe,replace with crushed pineapple or add extra butter/oil.
    • Ground Spices : Cinnamon, nutmeg and ginger. These add nice flavor.
    • Raisins : Use golden raisins, can be replace with dried cranberries.
    • Shredded coconut flakes : Adds nice texture to the muffins.Use sweetened or unsweetened.
    • Optional Toppings : Rolled oats, shredded coconuts , choclate chips ( for kids), pumpkin seeds. chopped nut.

HOW TO MAKE MORNING GLORY MUFFINS?

Sift dry ingredients and set aside.

 

If using flax egg, mix flax seed powder with water and set aside. 

Add melted butter,flax egg and wet ingredients and mix. Add all the fruits, veggies and nuts one after the other.

 

Combine flour in bathes and mix well.

Preheat the oven and line muffin tray with liners and scoop batter in all of them.

 

Garinsh with pumkin seeds or any nuts or coconut flakes.

Bake the muffins at 425 degree F for the first 5 minutes and decrese the heat for the rest of the time. 

 

Enjoy when completely cool as a snack or breakfast. 

 

They taste heavenly with hints of fruits, nuts and veggies.

 

HOW TO STORE THESE MUFFINS?
  • Completely cool the muffins and store in an airtight container for upto a 5 days on counter top or longer in refrigrator.
  • To freeze the muffins cool completely and place in a freezer bag for upto 2 months, thaw in refrigrator over night and warm to serve.
TOP TIPS FOR THIS RECIPE

  1. Baking the muffins at 425 degree F for the first 5 minutes helps to raise the muffins nicely and creates a crust. Do not forget to reduce the temperature to 350 degrees.
  2. Every oven is different so these muffins can be done baking anytime between 18 – 23 minute. Keep and eye on them.
  3. For mini muffins bake at 350 degrees F for 13 to 15 minutes.
  4. If using zucchini squeeze out the extra moisture to avoid soggy muffins.
  5. These healthy breakfast muffins has lots of fruits , veggies and nuts in a single serving so alter the ingredients as per your needs.
  6. Do not skip the carrots entirely,use fresh shredded carrots, they add moisture to the recipe, pre shredded carrots are usually dry.
  7. Drained crushed pineapple or shredded zucchini (squeezed ) should work fine in place of the shredded apple.
  8. Use non stick muffin liners (parchment variety) for the muffins come out clean.
  9. This recipe has a lot of room for substitues, make a notes of what you are substituing with what to avoid missing key ingredients.
  10. Add ground spices as per taste, all the spices mentioned above complement nicely with each other.

Ingredients

Dry Ingredients

  • 2 cups whole wheat/all purpose flour(260 gms)
  • 2 tsp baking powder
  • 2 tsp cinnamon powder
  • ½ tsp ground ginger or
  • ¼ tsp nutmeg powder optional
  • ¼ tsp salt

Wet Ingredients

  • ½ cup brown sugar (100gms) light or dark
  • 3 eggs or flax eggs flax egg recipe in notes
  • cup butter/olive oil/coconut oil (80 ml)
  • cup applesauce(60gms)
  • cup orange juice(60ml) any juice
  • ¼ cup honey(85 gms) (reduce to half for less sweeter muffins)3
  • 1 tsp orange zest
  • 1 tsp vanilla

Fruits ,Veggies and Nuts

  • 2 cups shredded carrots(260 gms) 3-4 approx
  • 1 cup shredded apple(140gms) 1 large
  • ½ cup chopped pecans (60gms)
  • ½ cup raisins(70 gms)
  • ½ cup coconut flakes optional
  • 2 tbsp pumpkin seeds to garnish muffins optional

Instructions

  • Line muffin tins with liners and preheat the oven to 425°F/220°C.
  • In a meduim bowl seive flour,baking powder and spice powders. Combine all dry ingredients together.
  • Whisk butter and sugar. Add eggs/flax eggs and mix.Add orange juice and zest. Add applesauce. Stir in grated fruits and veggies, chopped nuts.
  • Add the dry ingredients to the wet mixture and mix by folding.
  • Scoop the batter to the lined muffin tins and bake for 5 mins at 425°F. Reduce the temperature to 350°F and bake for 18- 21 mins till a toothpick comes out clean at center.
  • Let cool completely and Store in airtight container for upto 5 days at room temperature.

Notes

To Make Flax Egg : Add 1 tablespoon of ground flax seed powder to 3 tablespoons of water and set aside for 10 mins to form as a gel.

    My grandparents ate morning glory muffins all the time and I remember enjoying them as well. I’ve never made them myself, but this recipe looks easy to follow. I will give them a try.
