Spicy Lemon Spaghetti

This Spicy Lemon Spaghetti is made with Spaghetti Squash a nutreint rich food which is low  in calories.

When cooked spaghetti squash comes out in stands that looks similar to noodles so this will be your chioce for your next pasta or noodles.

 

 

WHY SHOULD YOU EAT SPAGHETTI SQUASH?

WHAT IS SPAGHETTI SQUASH?  HOW DOES IT TASTE?

 

Spaghetti squash is a vegetable looks no different to every other squash when raw. It has seeds  similar to pumpkin seeds that can be roasted .When cooked it’s flesh comes out in spirals that are cruncy and has the texture of noodles.

 

Spaghetti squash is neutral in flavor, slighly watery with a crunchy texture.So can be spiced up as you wish and use them as your alternate to noodles, pasta, rice.

HOW TO CUT AND COOK SPAGHETTI SQUASH?

The skin of this squash is very hard, to cut it use a paring knife,hold on at one end keeping your fingers far from the cutting area push the tip of knife slightly and make small slits (dents) all around. These slits releases air and make it easier to cut with out slipping. Cut along slowing.


For longer noodles like strands cut the squash horizantally in half or in cirles that resemble donuts.


For recpies that need smaller stands cut it vertically.

Spaghetti squash can be baked, boiled, steamed ,pressure cooked in a instant pot, in a slow cooker depening on the recpie. The quickest is in a instant pot.


INGREDIENTS TO MAKE SPICY SPAGHETTI SQUASH

Spaghetti squash : Any size spaghetti squash works if baking, but to cook in an instant pot, choose the one that fits you pot. 

Peanuts : Peanuts adds cruch and taste to the recipe. 

Red Chilies : Whole red chiles or chili flakes add the heat to the recipe.

Other spices : cumin, mustard seeds, turmeric, curry leaves, hing. These are the ingredients to make lemon rice. They add flavor to the recipe.

Lemon : Adds the necessary tang to the recipe.

 

HOW TO MAKE SPICY SPAGHETTI RECIPE?

Cut the Spaghetti as mentioned above. Remove the seeds and the gooey stuff by scraping with a spoon. 


In an Instant Pot add a cup of water and season with salt. Pressure cook for 7 minutes and realease pressure. Let cool a bit before removing from the pot.

Remove the cooked spahgetti squash and cold enough to handle, use a fork to scrape the flesh towards inside. 


You can see that they resamble thin cooked spaghetti.

Set aside in a plate. The skin can be discarded.

Heat a skillet and add a teaspoon of oil. when hot, add peanuts and roast for a minute or two. Saute dry redchiles and grees chiles. Add these as per your heat levels. 


Add the others spices as cumin, turmeric,  mustard, curry leaves, and hing. when they splutter add spaghetti squash and mix well.


Season with salt and lemon juice. Adjust seasoning as per your taste. 

Mix well and remove from heat. Do not over cook, just mix till the ingredients are combined..

TOP TIPS FOR SPICY LEMON SPAGHETTI
  1. Choose your method of cooking you feel comfartable.Cooking in Instant pat is quicker, use the minimum amount of water to avoid soggy spaghetti.
  2. To roast spaghetti squash slice and roast for 40 mins in the oven at 400 F.
  3. Skip green chilies to make it less spicy.
  4. As spaghetti squash has a neutral flavor this recpie is very spicy and tangy, reduce the red/green chilies and the amount of lemon juice to your taste.
  5. Cook on high flame to evaporate water and combine only for 2-3 minutes do not over cook.

Ingredients

  • 1 Spaghetti squash medium
  • ¼ cup peanuts
  • 2 dry red peppers or 1 tbsp red pepper flakes
  • 2 green chilies optional - for extra spiciness only
  • 1 lemon
  • 1 tsp cumin
  • 1 tsp mustard seeds
  • 10 -12 curry leaves
  • ½ tsp turmeric
  • ¼ tsp asafoetida or hing optional
  • salt to taste

Instructions

  • Spaghetti squash is very hard so use a small knife to pierce first to make a dent and cut throught it slowly. Slice the spaghetti squash pressure cook in Instant pot for 7 mins placing the bottom side down.
  • Let it cool and use a fork to scrape the flesh towards the center, fluffing them as you go into a plate.
  • Heat a oil in a pan, add mustard seeds, cumin. when then splutter add peanuts and fry till brown.
  • Add turmeric, curry leaves, red pepper flakes, green chilies.(adding all makes it very spicy so add accordingly to suit your spice level), hing and saute for a minute
  • Add fluffed spaghetti and give a good stir.Add salt and lemon juice and adjust according to taste. Cook by stirring for 3 more miniutes and turn off the stove.
    Serve warm.
