Tigernut Shortbread Cookies with Lavender & Chocolate

These tigernut shortbread cookies are a wonderful snack or dessert! Most importantly, they’re free of inflammatory ingredients and require little effort to make. They’re vegan, gluten-free, grain-free, nut-free, oil-free, and low in sugar. Let’s take a look at the ingredients!

Tigernut Flour

When I first went gluten-free, I purchased a lot of gluten-free flour blends. Although these blends make the transition easier, many are grain-based and cause sharp spikes in blood sugar. In an effort to be more cautious, I decided to explore grain-free flours. Tigernut flour has been on heavy rotation in my kitchen these days!

Contrary to the name, tigernuts are not nuts. They are a root vegetable, about the size of a chickpea. When ground into a flour, the flavor is sweet and nutty. Tigernuts are rich in fiber, vitamins, and minerals. They are an especially good source of iron, magnesium, vitamin E, and insoluble fiber. Insoluble fiber minimizes constipation by speeding up the processing of waste. They’re also linked to improved heart health and a stronger immune system.

I love the nutty flavor that tigernut flour adds to these shortbread cookies!

Lavender

Lavender is a very versatile herb. Though it’s primarily known for its relaxing scent, its flavor is highly underrated in my opinion. I added lavender to put a twist on the traditional shortbread cookie. It has an earthy, minty flavor that compliments chocolate. Plus, your kitchen will smell amazing once you pop these cookies into the oven!

Though not much is used is used in this recipe (a little can go a long way), lavender is known to have a detoxifying effect on the body. It provides iron, calcium and vitamin a to support the blood, bones, and eyes.

Coconut Butter

This ingredient is essential to this recipe! It’s what helps the cookies get their texture and flavor. You must use coconut butter in this recipe, not coconut oil. Coconut butter contains both the oil and the coconut meat. So in addition to the healthy fat, you get a good supply of fiber. It’s also rich in lauric acid, which helps boost immunity and fight off bacteria. I love the creaminess of coconut butter, and I find it gives these cookies a flavor more similar to traditional shortbread cookies.

Chocolate Chips

Dipping these cookies in chocolate is completely optional, but I highly recommend it. As I mentioned, the chocolate pairs well with the buttery, lavender flavors of the cookie. It also makes this treat a bit more decadent. If you’re looking for a low-sugar option, you can always use sugar free chocolate chips – I like the Lakanto brand!

Tigernut Shortbread Cookies with Lavender & Chocolate

Shortbread cookies flavored with lavender and chocolate - gluten-free, vegan, grain-free, oil-free, nut-free, and low-sugar!

Ingredients
  

  • 2 cups tigernut flour
  • 1 teaspoon lavender (ground)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut butter (softened)
  • 1/4 cup maple syrup (can use sugar-free)
  • 2 tablespoons water
  • 2/3 cup chocolate chips (optional)
  • 1 teaspoon coconut oil (optional)

Instructions
 

  • Stir flour, lavender, salt, vanilla, butter, and syrup together in a bowl.
  • Add water and mix until the mixture becomes more of a dough.
  • Firmly pack the dough into an 8x8 pan lined with parchment paper.
  • Refrigerate for at least 2 hours.
  • Once chilled, cut the dough into 24 bars.
  • Bake for 15 mins at 350°.
  • As the cookies cool, heat the chocolate chips and coconut oil.
  • Dip each cookie into the chocolate mixture, and refrigerate until the chocolate hardens.
  • Enjoy! If cookies are coated in chocolate, store in the fridge. If not, keep them at room temperature.
