Sweet Potato and Lentil Patties

These super easy to make Sweet Potato and Lentil Patties are a great way to incorporate some more veggies into your diet. They are crispy from the outside and soft from the inside. For us, they are the best meat-free alternative for any burger.

Veggie petties have been our obsession lately. They are perfect for meal prep, they are healthy, and they combine our favorite veggies, carrots and sweet potatoes.
Sweet Potato Carrot Lentil Patties
We prefer using our hands to mix all the ingredients, this way we reached the best texture. It’s also the best way to form the patties. Feel free to make any size of patties you like. Ours are about 2-2.5” wide.




 

 
We decided to oven bake them because we don’t like adding extra olive oil if it’s not necessary.
Vegan Patties
This recipe is perfect for vegans and vegetarians. We used gluten-free quinoa flour which makes our Sweet Potato and Lentil Patties perfect for people who are following a gluten-free diet.

Sweet Potato Patties

INGREDIENTS FOR BURGER PATTIES

  • 1 cup uncooked red lentils
  • 3 cups of water (for cooking lentils)
  • 2 medium-large carrots (grated)
  • 1 large sweet potato (grated)
  • 1 small red onion (chopped)
  • 2 tablespoons chopped parsley
  • 3/4 to 1 cup quinoa flour (depending on the dampness of the batter)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/3 teaspoon black pepper

INSTRUCTIONS

  • Cook lentils in 3 cups of water on medium heat for about 10-12 minutes or until cooked. Drain them after cooking.
  • While lentils are cooking, grate carrots and sweet potato and chop red onion and parsley. Use hands to squeeze out as much water as possible from grated potatoes and carrots.
  • In a large combine cooked lentils, grated sweet potato, carrots, chopped parsley, onion, add spices and 3/4 cup quinoa flour. Mix with hands to incorporate. If the mixture is too moist and more quinoa flour making sure not to add more then 1 cup in total. 
  • Use your hands to form patties. We’ve got 8 patties from this mixture.
  • Burger patties can be fried with a little olive 2-3 minutes each side, or baked for about 20-25 minutes at 375 °F (190 °C) flipping halfway way. Choose which option suits you the best. We baked ours in the oven without adding extra olive oil.
  • Serve and enjoy your Sweet Potato and Lentil Patties!

NOTES

  • Don’t wait for lentil to cool down. This will make the patties dry, and you won’t be able to form them – they’ll fall apart.
  • If the mixture is too wet add 1 tablespoon of quinoa flour.
