When I think of making a dessert, I'm almost never team marshmallow. I'm team chocolate all the way. However, Derek loves a good rice krispie treat so he was definitely the number one benefactor of this blog post. This recipe makes one good sized rice krispie, doesn't require any special cooking utensils or baking dishes, and comes out perfect when tested 10+ times for accuracy... ask me how I know.

Single Serve Rice Krispie Treat:

This recipe is super easy to make. All you need to do is melt your butter in the microwave, then add in the marshmallows and microwave for a few more seconds. Then you'll mix the two together until well combined, and then pour in your rice krispie cereal and mix until well combined.

Then you can take a small food storage container and push the mixture up into one corner to form it into a small bar. Let it set for 5-10 minutes before eating so the marshmallow has enough time to cool, set, and firm up just a bit.

Rice Krispie Ingredients:

  • 1 tbsp Butter
  • 1/2 cup Mini Marshmallows
  • 1 cup Rice Krispie Cereal (or any generic variation)

Recipe Notes:

  • Pay careful attention to the microwave times and don't overcook your marshmallows. From trial and error I learned overcooking the marshmallows makes them way too hard way too fast. There is definitely a limit to what the marshmallows can take, and a little bit of science. The times listed are definitely more of a rule than a suggestion.
  • When forming your Rice Krispie into a bar, it can be helpful to spray your hands with a little cooking spray. This will help you to shape the bar without them sticking to your hands and making a huge mess.
  • If you don't want an entire box of crisp rice cereal, you can purchase one of those mini single serving boxes which should be enough for one batch of this recipe.
