Roasted Tomato Basil Soup

This Tomato Soup made with fresh ingredients soup is bursting with incredible  flavours.When in season roasting fresh tomatoes along with garlic makes it the flavorful and tastier soup ever.  

 

Roasting the tomatoes with garlic makes this soup stand out from the regular canned version. Fragnant flavor from fresh basil and creaminess from the cream balances the soup so well. Tomatoes and fresh basil are a match made in heaven in this soup or a sandwich. 

 

However roasting might take a few minutes of extra time but the flavors it adds is so satisfying and worth the extra minutes. Also, the best thing is we need not babysit the process which can be done ahead of time.

Okay, so no more blah blah of this soup and let’s get to the business of making this awesome soup.

INGREDIENTS TO MAKE ROASTED TOMATO BASIL SOUP

    • Tomatoes : Fresh Roma or any tomatoes works for this soup, this soup tastes much better when tomatoes are in season.
    • Garlic : Fresh garlic pods are preferred. 
    • Basil : Again fresh basil adds that  nice aroma than dried basil. you would notice the differnce when you try it.
    • Olive oil : A drizzle of olive oil on the top or to saute oils and roast tomoates adds the nice flavor. Any neutral oil should work except oils pungent like mustard oil.
    • Onions : Few onions adds nice flavor to soup, skip if you not like them. 
    • Cumin : Cumin is one spice that adds nice aroma to  most of the soups.
    • Red chili powder/flakes : A little red chili flakes doesnot hurt as they balance the other ingredients. YES, they add some heat to the soup, so add as per preference.
    • Cream : Adding cream make it rich and creamy and helps to balance the tartness of the tomatoes.
    • Sugar : Same as cream to balance the tartness of tomatoes, again its optional.
    • Salt & pepper : To season the soup, adjust pepper to taste or skip if using red chili flakes.

WHY SHOULD YOU TRY THIS TOMATO SOUP?

 HOW TO MAKE ROASTED TOMATO SOUP?

Slice the tomoates in circles about 2 cms thick.Arrange in a baking tray in a single layer. Drizzle some olive oil, salt and pepper. 

 

Add garlic slices and bake in a preheated oven to roast for 40 minutes @ 350 degree F.

Heat a sauce pan, add onions, olive oil. The oil need not be hot. Saute the onions on low heat for a minute or two. We need the flavor of olive oil to infuse into onions, not to brown them. Add cumin, fresh basil and red chile flakes, saute for minute or so.

 

Add roasted tomatoes and saute for 2 minutes, this lets the basil flavor infuse into the tomatoes.

Add required water and use an immension blender to make a smooth soup.

 

You can transfer the sauted tomoatoes and rest of the spices and blend seperatley in a mixer. Do not add water ahead to blending.

Transfer to the sauce pan again and cook for 2 minutes or more adjusting seasoning as needed.

 

Bring to a boil and finally add a teaspoon of sugar and dash of cream. The more cream the richer the soup. 

 

Garnish with chopped basil and pepper. A dash of olive oil or cream always works.

 

Serve with grilled cheese or croutons or chioce of bread. 

This soup can also be served in a bread bowl.

TOP TIPS FOR THIS RECIPE

  1. Roast the tomatoes ahead to save time for a busy day , this will enhance the flavours even more.
  2. Tomatoes are tart when not in season , roast few slices of red bell pepper for extra flavour.
  3. Adding cream, extra butter gives rich flavour to the soup, these are totally optional if you would like to avoid them.
  4. Instead of water add any choice of broth, if adding so be check on seasoning as needed especially salt.
  5. If you do not prefer to puree your soup like baby food in  a blender. Use an immension blender and puree to the needed consistency.

Ingredients

For Roasted Tomatoes

  • 3 lbs tomatoes sliced
  • 6-8 garlic cloves sliced
  • ¼ cup olive oil
  • salt and freshly ground pepper to season

To Cook

  • 1 meduim onion diced
  • 1 cup fresh basil
  • ½ tsp red pepper flakes or powder for heat (optional)
  • ½ tsp cumin powder
  • Salt and pepper seasoning as required
  • 1 tbsp butter for rich flavor (optional)
  • 1 tsp sugar optional (to remove tartness of tomatoes)
  • ¼ cup heavy cream optional ( to add creaminess)

Instructions

  • Pre heat the oven to 400° F and grease a baking tray with oil to line the tomato slices, garlic. Drizzle oil and season with salt and pepper. Roast for 40 mins.
  • In a sauce pan add butter and saute onions till slightly brown, add fresh basil and cook for 2 minutes stirring occasionally. Add roasted tomaotes along with juice, cumin powder, red chilli flakes ,salt and stir to combime well.Turn off the stove.
  • Use an immernsion blender/ regular blender to blend soup till smooth. Pour in the same pan and add required water and adjust seasoning as per taste. Bring to a boil for 10 - 15 mins mins.
  • Add cream and simmer for 2 more minutes. Garnish with chopped basil leaves and serve warm with grilled sandwich or as is.
