    👩🏻‍🍳 Why You'll Love this Spicy Edamame Side Dish

    Edamame probably wouldn't win a Most Popular Veggie contest! Or even a Most Popular Bean contest. But I really like edamame. And I like it even more when it is seasoned nicely!

    This recipe is great because it only takes 5 minutes to put it together and it pairs well with so many main dishes. It's healthy and filling and would be the perfect side dish or snack if you're looking for something with a little bit of zing and not many calories!

    🥘 Ingredients Needed

    This edamame side dish features healthy ingredients that are unique and delicious!
    • shelled edamame - an underrated but delicious and versatile vegetable!
    • lime juice - gives the dish some tangy, citrus-y flavor.
    • chipotle powder - plays well off the lime juice and provides a nice punch of heat.
    • salt and pepper - the chipotle can't do all the work; add some salt and pepper to ensure it's nice and flavorful!
    • sunflower seeds - adds a delicious crunch.

    🔪 Instructions

    This unique recipe with edamame beans is super quick and easy to make!
    1. Mix lime juice, chipotle powder, salt, and pepper in a bowl.
    2. Cook the edamame according to instructions.
    3. Pour the lime juice mixture over your edamame and stir, being sure to coat everything evenly.
    4. Right before serving, toss in the sunflower seeds.

    What is edamame?

    Edamame is another name for immature soybeans, commonly served in the pod in Japanese cuisine.

    Is frozen edamame already cooked?

    Not quite; the edamame is blanched before freezing to protect the quality of the beans, so microwaving the beans is just reheating them, in a way.

    Is edamame good for you?

    Absolutely! Edamame is a good source of soy protein as well as fiber, antioxidants, and vitamins, as well as being naturally gluten- and cholesterol-free and low in calories.

    How do you cook shelled edamame?

    If the edamame is still in the pod (or shell), the best way to cook it would be to boil it in some water for about 3 to 5 minutes, then drain and sprinkle with salt and pepper or whatever seasonings you like.

    What happens if you eat edamame shells?

    While you probably don't want to do this as the pods are very tough and won't ever reach a point where they feel chewed enough, they're completely non-toxic, so eating them won't harm you in any way.

    Is edamame different from soybeans?

    Edamame is just a juvenile form of soybeans, harvested earlier to get a more tender and vegetable-like product, whereas soybeans are yellow or brown and and more often used to make oils or tofu.

    🧊 Edamame Side Dish Storage

    For leftovers, transfer them to something airtight (like a plastic container or bag) and store in the fridge for 4-5 days.

    The easiest way to reheat your leftover edamame is in the microwave. Zap it in increments of 30 seconds or so until it's all heated through, stirring in between each round.

    You can also freeze these leftovers. Edamame is particularly resilient and can last up to a year in the freezer, though it will lose some of its quality.

    The best way to reheat after freezing is to allow your edamame to that in the fridge overnight, then follow the same instructions as above!

    This shelled edamame recipe is spicy, flavorful, and so quick to put together as a show-stealing side dish or a healthy and filling snack!

    📖 Variations

    • For some added flavor, switch up the seasonings or add more. Garlic powder, onion powder, and smoked paprika would all work well, but play around and see what tastes best to you!
    • If you don't have chipotle powder on hand, you can substitute smoked paprika in a 1:1 ratio, OR you could make your own blend of spices that come close to chipotle: chili powder, paprika, cumin, garlic powder, oregano, coriander, and some salt will do the trick.
    • This chipotle lime coating would taste good on a number of other vegetables as well. Try it on some broccoli, asparagus, green beans, or whatever your favorite vegetable is!

    Ingredients
     

    • 10 ounces frozen shelled edamame (1 package)
    • 1 tablespoon lime juice
    • ¼ teaspoon chipotle powder
    • ¼ teaspoon salt
    • ⅛ teaspoon pepper
    • 2 tablespoons sunflower seeds

    Instructions
     

    • Cook the edamame according to the package instructions.
      10 ounces frozen shelled edamame
    • In a small bowl, combine the lime juice, chipotle powder, salt, and pepper.
      1 tablespoon lime juice, ¼ teaspoon chipotle powder, ¼ teaspoon salt, ⅛ teaspoon pepper
    • Add the lime juice mixture to the edamame and toss to coat.
    • Mix in the sunflower seeds right before serving.
      2 tablespoons sunflower seeds

    Notes

    • Other seasonings that would add to the flavor of this dish are garlic powder, onion powder, and smoked paprika.
    • You can substitute smoked paprika for chipotle powder if you don't have any on hand.
    • To make your own chipotle powder blend, combine chili powder, paprika, cumin, garlic powder, oregano, coriander, and sea salt.
    • Any vegetable would taste great with this chipotle lime coating; try it out on all of your favorites.
