You can make roasted potatoes in the pressure cooker with regular potatoes but you can also make them with baby potatoes.
If you like you can leave the skin on your potatoes. Especially with new potatoes, the skin is so thin there is no need to peel.
Not only does it save you time but you also keep all the nutrients inside.
Just give the potatoes a good wash or scrub with cold water and you are ready to go.

Instant Pot Roasted Potatoes Ingredients
To make this roasted potatoes recipe you need only a handful of ingredients.
Put the following on your grocery shopping list and have them ready when you start:
- Russet potatoes
- Olive oil
- Butter
- Pinch of salt
How To Make Instant Pot Roasted Potatoes
Peel the potatoes and wash them in cold water. Cut every potato in half, then cut every half in half and repeat for every quart of potato so you have 8 pieces per potato.
Put the potatoes in the Instant Pot and add 1 cup of water into the pot. Close the lid and secure and turn the valve to the sealing position.
Select Manual or Pressure cooker and cook on high for 3 minutes. Naturally, release for 5 minutes then quick release.
Drain the potatoes and put them in a separate bowl.
Cancel the Instant Pot and select the Sauté option and add the olive oil and butter and let it melt.
Then add the drained potatoes and let them sit for 3-5 minutes before turning the potatoes.
Continue until the potatoes are brown this takes between 5 to 10 minutes.
Serve immediately.
If you cooked a big batch of potatoes, roast them in 2 or more turns. Do not crowd the Instant Pot and give the potatoes space to brown on all sides.
How To Store Roasted Potatoes
I love to make big batches of potatoes so I always have some when I need to have some potatoes on the table fast.
That is why I recommend boiling your potatoes and then store them. When you want to roast them, you can do that else just reheat them.
If you have leftover roasted potatoes, you can follow the same instructions below.
First, cool the potatoes completely then choose your preferred way of storage:
- Refrigerate – store the boiled potatoes in an airtight container or Ziploc bag. You can keep them in the fridge for up to a week
- Freeze – when you want to keep them longer, freeze the potatoes. Store them in an airtight container or freezer-friendly storage bag. Label and store it for up to 3 months
How to Reheat Roasted Potatoes
The best way to reheat roasted potatoes is to use a cast-iron skillet and butter.
You can combine olive oil and butter as well and then add the leftover potatoes.
If you have frozen the potatoes and forgot to thaw no problem. Add them to your skillet preheated to medium and let them warm slowly.

You can add various additions to make this delicious side dish taste even better. You can add:
- Onions
- Scallions
- Garlic or garlic powder
- Chives
- Paprika

This recipe is good for two but you can easily double the recipe. You do not need to add more water into the Instant Pot.
To brown the potatoes, roast the potatoes in one or more batches in the Instant Pot.
You need to double the amount of olive oil and butter as you will be preparing multiple batches to roast the potatoes.
