You know how some recipes are just worth the wait? This is one of those recipes.

Technically, you could marinate my take on Mojo Chicken for only 20 minutes and bake it in as little as 15 minutes, but oh my goodness – if you take the time to marinate in advance and saute it low and slow, it’s seriously next level amazing!

Whether you serve this in a bowl, on a salad, or in tacos, this chicken recipe is sure to be a hit with everyone you know.

What Is Mojo Chicken?

Mojo chicken is chicken that’s been marinated in the most amazing citrus garlic marinade and then cooked. You can use chicken thighs, chicken breasts, or an entire chicken. It can be oven roasted or cooked on the stovetop.

My version of Cuban Mojo Marinade is made from orange juice, lime juice, orange zest, lime zest, garlic, olive oil, onion, fresh cilantro, fresh oregano, ground cumin, salt, and pepper.

Traditional mojo marinade uses bitter orange juice (made from Seville oranges). Since that’s not an easy-to-find ingredient where I live, I’ve added in lime juice to mimic the flavor.

How Long to Marinate Chicken

I think this tastes best when it has marinated for 12 hours, which makes it perfect to prep in the morning for a delicious dinner later that day.

If you choose to marinate your chicken for more than a couple of hours, you’ll want to check it before cooking it. Look for any suspicious change of color and see if you notice any off smells just to make sure it hasn’t gone bad.

How to Cook Chicken

I’ve written this recipe to be cooked low and slow on the stovetop. This lets the flavors really incorporate into the chicken without burning the herbs.

If you’re pinched for time, you could also bake the chicken breasts at 450 F (232 C) for 15 minutes, then let it rest on the baking sheet tented with aluminum foil for 5-10 minutes (or until the internal temperature at the thickest point reads 165 F on a meat thermometer).

Baking it at such a high heat locks in the juices, but I would make sure to scrape off any pieces of cilantro or oregano before baking so they don’t burn.

How to Serve Mojo Chicken

I love serving this citrus marinated chicken with rice, beans, and grilled pineapple.

If you don’t prefer serving it as a bowl, you could also serve it over lettuce as a salad, in a tortilla as a taco, or with bread as a sandwich. I recommend pairing it with either garlic mayonnaise or lime mayonnaise.

  1. Wash and dry the chicken breasts and place in a container with a tight fitting lid.
  2. Make the Mojo Marinade.
  3. Pour the marinade over the chicken and marinate for a minimum of 20 minutes. 12 hours is best.
  4. Heat a medium or large nonstick lidded skillet over medium-low heat. Add 2 Tablespoons olive oil and swirl to coat. Add the marinated chicken breasts to the skillet. Saute covered for 15 minutes on the first side, then flip and saute covered for an additional 15 minutes on the second side. Remove from the heat. Let the chicken rest with the lid on for 10 minutes, or until the chicken is cooked through and the internal temperature at the thickest point registers 165 F (74 C).

Notes

This recipe doubles beautifully if you’re cooking for more people (and it’s great for meal prep).

If you use dried oregano instead of fresh, you only need to use 1 teaspoon.
