Soya chunks, made from defatted soy flour, are a top-notch source of protein that's easy to find. They're known as meal makers in Indian cuisine and have become a favorite among vegans globally. Note that in this recipe, I'll be using the terms "Soya chunks" and "meal maker" interchangeably.
In Sri Lanka, these soya chunks are often called soya meat and are typically cooked with coconut paste or milk, which adds a rich, creamy taste to the dish. With just the right spices, Soya Chunks Curry offers a tasty meat-free alternative that's sure to impress your family.

Preparing Meal Maker Curry
- Start by heating oil in a pan over medium heat. Add cardamom, cinnamon stick, and fennel seeds to infuse the oil with flavor.
- Toss in sliced onions and green chili. Sauté until the onions are soft and golden brown, which will enrich the curry with a deep, sweet flavor.
- Stir in the onion paste and continue to sauté until the raw smell dissipates, adding a foundational aroma and thickness to the curry.
- Add ginger-garlic paste next and sauté until its raw smell fades away.
- Sprinkle in turmeric, chili, coriander, garam masala powder, and salt, mixing well to distribute the spices evenly.
- Mix in the chopped tomatoes and cook until they break down and become mushy, enriching the sauce.
- Pour in water, stir well, and let the mixture simmer for 5 minutes, allowing the flavors to meld.
- Add the pre-cooked soya chunks to the pan and gently mix them into the curry to ensure they are evenly coated with the flavorful sauce.
- Cover the pan with a lid and let the curry cook for 7 to 10 minutes, which will allow the soya chunks to soak up the aromatic spices.
- Remove the lid, sprinkle in pepper powder and lemon juice, and stir quickly to combine everything evenly.
- Finish the dish by garnishing with fresh cilantro leaves and turning off the heat.
