I am so all about infusing my recipes with the amazing flavours fresh veggies and herbs have to offer. However, sometimes feel like I might have a nervous breakdown if I am forced to chop another onion, only to have my picky eater sift through the entire dish just to pick them out. Fiesta Pasta is here to rescue you from the perils of cutting board dramas. The ultimate freezer and pantry pasta dish, ready in under 30 minutes and makes enough to feed even the hungriest family!

Fiesta Pasta - Vegan, Gluten-Free & Nut-Free

An easy, delicious and kid-friendly recipe that's loaded with corn, black beans and beefless grounds in a creamy Mexican tomato sauce. Bonus... it's ready in under 30 minutes with no chopping, mincing or blending!

Ingredients
  

  • 1 340g box macaroni - I used Gluten-free
  • 1 tbsp olive oil
  • 360g beefless grounds - I used Gardein's grounds
  • 1 cup frozen corn
  • 1 cup cooked black beans
  • 1 794g can pureed tomatoes
  • 1 tbsp butter - used Earth Balanace
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp sea salt - or more to taste
  • 1/2 cup sour cream - I used Tofutti
  • 1/2 cup grated cheese - I used Daiya Farmhouse cheddar-style

Instructions
 

  • Cook pasta according to the manufacturers instructions, drain and set aside.
  • Over medium heat in a large non-stick skillet, add oil, beefless grounds, corn and beans. Cook until grounds are lightly browned and corn is thawed.
  • Add butter, garlic, onion, paprika, chili, cumin and salt. Cook stirring frequently for 2-3 minutes.
  • Carefully pour in tomato puree. Cook for another 3-4 minutes.
  • Stir in sour cream and cheese until well incorporated, then remove from heat.
  • Toss in pasta, and stir well.

Notes

* This dish is especially delicious when topped with chopped green onion, cilantro and another big dollop of sour cream.
** Sometimes I like to used a can of diced tomatoes in place of the pureed style, and just pulse them a couple times in my processor to break them down just a bit. 
*** 1 package of taco seasoning can easily replace all the spices included in the ingredients list. I tend to avoid the packaged seasonings, because they often contain gluten and creepy ingredients I can't pronounce.
