Are you familiar with cracker candy? There are seemingly thousands of variations of it, from the ever-classic graham cracker pralines, to peppermint saltine, and s'mores, to who knows what else.

And around our house, we love the stuff. -- No matter what the variation or variety.  With graham crackers, or saltines, or Ritz as the base, whenever I make a batch it's always gone in a flash.

You usually think of cracker candy as a Christmas-time treat, right?  Because people make big batches of it for Christmas cookie trays or as cookie exchange treats because it's such a classic favorite.  Or, they prep it in decorative baggies or tins for holiday gifting, because it packs up so well and is adored by all. 

Well all of that Christmas-time love of the stuff holds true at our house.

But you know what else? -- Cracker candy has also become a favorite breakfast treat at our house.  Breakfast, you say?? -- Yes, breakfast.  Somehow my husband and daughter have started eating the stuff for breakfast.

It all began with a pan of this Ritz Cracker Candy.  And truth-be-told, I'm sure the practice of cracker candy for breakfast is all my husband's fault.

In this Ritz cracker candy version, buttery golden Ritz crackers are slathered in cracker candy's signature boiled sugary syrup, then loaded up with a smear of milk chocolate, white chocolate morsels, and chopped pecans.  It's a super tasty flavor combination that's tough to resist.

And apparently my husband couldn't resist it so much, he started grabbing a stack of the stuff for breakfast.  And my massive-sweet-tooth-daughter? -- Well, she followed his not-so-fabulous lead.  I guess it's not so bad so long as the cracker candy breakfast-stacks don't get too tall ...

While I don't encourage you and your family to start eating this stuff for breakfast, I do highly encourage you to whip up a batch of Ritz Cracker Candy for enjoying as a fabulous sweet treat. -- For Christmas time, or ANYtime!

Ritz Cracker Candy Ingredients

It takes just 6 simple ingredients to whip up a pan of this Ritz Cracker Candy.  To make a batch, you'll need:

  • Ritz crackers - About 2 sleeves of Ritz crackers serve as this cracker candy version's base.  The size of buttery Ritz crackers lend themselves nicely to making each cracker a single piece of cracker candy.

  • Brown sugar & butter - Light brown sugar and unsalted butter are boiled together to create the signature cracker candy sugary syrup.

  • Milk chocolate chips - Create the thin layer of chocolate on top of the brown sugar syrup.  You can use semi-sweet chocolate chips if you prefer.

  • White chocolate morsels - A sprinkling of white chocolate chips, usually labeled as "morsels," adorn the top of the cracker candy.

  • Pecans - A sprinkling of chopped pecans on top brings nice rich flavor and crunch.

How to Make Ritz Cracker Candy

For such a tasty little treat, Ritz Cracker Candy is pretty easy to pull together.  Truly, with its fabulous flavor, you'd think it's much more difficult to make.

To whip up a pan full, start by laying out Ritz crackers on a rimmed jellyroll baking sheet.  

Cover the baking sheet with foil, and then place the crackers close together and touching in a single layer -- fitting as many on the baking sheet as you can.  If you end up with gaps along the edges, break some crackers in half to fill up the space as best you can.

Truly, with its fabulous flavor, you'd think Ritz Cracker Candy is much more difficult to make.

Then make the signature cracker candy sugar syrup.

To do that, simply place some butter and brown sugar in a saucepan.  Bring it to a boil, and then boil the mixture for 3 minutes -- stirring it constantly to prevent scorching.

While the brown sugar syrup is piping hot, immediately pour it evenly over the crackers in the baking sheet.  Try to get some sugar syrup on every cracker.  You can spread the sugar syrup a bit if needed to get some on every cracker, but to be honest, this stuff begins to get difficult to spread and move around as soon as it starts to cool at all.

Pop the pan of coated crackers in the oven and bake them up for 7 minutes.

Then sprinkle the top with milk chocolate chips, and leave the pan in the warm oven until the chocolate chips get all soft and melty.  Spread the melty chocolate evenly over the crackers, creating a nice thin layer of chocolate across the whole top.

Immediately while the chocolate is still warm, sprinkle on white chocolate morsels and chopped pecans.

Very lightly press down on the white chocolate morsels and pecans with the palm of your hand to help them adhere in the melted chocolate.

Then set the pan aside to cool completely.  Once cooled, break the cracker candy into individual pieces and you're good to go with enjoying the deliciousness!  Pretty easy, right?

And believe me, with its buttery golden Ritz crackers slathered in sugary syrup and loaded with milk chocolate, white chocolate morsels, and pecans, this Ritz Cracker Candy is one amazing tough-to-resist sweet treat, for sure.

It's just perfect for enjoying on Christmas cookie trays, at cookie exchanges, for gifting, or nibbling on just any time that sweet-treat craving hits.  Though I may not advise adding it to the breakfast-treat line-up -- as my hubby and daughter have done.

Ingredients

  • about 54 Ritz crackers (about 2 sleeves)
  • 3/4 c. unsalted butter
  • 3/4 c. light brown sugar
  • 2 c. milk chocolate chips
  • 3/4 c. chopped pecans
  • 1/2 c. white chocolate morsels/chips

Instructions

  1. Cover a rimmed jellyroll baking sheet with foil; spray lightly with non-stick cooking spray. Place crackers close together and touching in a single layer, fitting as many on the baking sheet as you can. If you end up with gaps along the edges, break some crackers in half to fill up the space as best you can.
  2. Place butter and brown sugar in a saucepan. Bring to a boil over medium-high heat. Boil for 3 minutes, stirring constantly. Immediately pour evenly over Ritz crackers.
  3. Bake at 350℉ for 7 minutes. 
  4. Turn off oven.  Remove pan from oven and sprinkle crackers evenly with milk chocolate chips.  Return pan to oven and let stand for 3 to 4 minutes or until chocolate is soft and melty.  Remove pan from oven and spread chocolate evenly over crackers.
  5. Immediately sprinkle top with chopped pecans and white chocolate morsels. Very lightly press down with the palm of your hand to help adhere to the melted chocolate.
  6. Allow to cool completely. Break cracker candy into individual pieces.
  7. Store in an airtight container at room temperature or in the refrigerator.
