One-Pan Creamy Mushroom Rice with Green Onions

This One-Pan Creamy Mushroom Rice with Green Onions is a real stunner. Made with just 5 simple ingredients, 1 ordinary frying pan and done in 30 minutes. The perfect dish for a busy weeknight dinner or for a relaxed weekend lunch, next to a bottle of Spanish wine.


The best part about this dish, besides how easy it is to make, is the flavors. We´re talking an explosion of goodness. Between the mushrooms and the green onions, it´s absolutely delicious. .


To make this recipe I used Spanish round rice. But you can use any type of medium to short grained rice, like Arborio rice. Basically, any rice you would to make a risotto. I also used homemade vegetable broth, but you can always use the store-bought stuff.


TIPS & TRICKS to Make this Recipe: The secret to this recipe, is to mix the rice around with the broth every 1 to 2 minutes. This helps release the starch from the rice, which is what gives the broth that creamy texture.

One-Pan Creamy Mushroom Rice with Green Onions

Ingredients

  • 1/4 cup extra virgin olive oil 60 ml
  • 12 button mushrooms
  • 1 spring onion
  • 3 cloves garlic
  • 1 cup round rice 200 grams
  • 4 1/4 cups vegetable broth 1 liter
  • sea salt & black pepper

Instructions

  1. Cut 12 cleaned button mushrooms into 1/4 inch thick slices, finely dice 1/2 the bulb of a spring onion, finely chop the green onion leaves, to end up with about 1/2 cup and finely mince 3 cloves of garlic

  2. Heat a large fry pan with a medium-high heat and add in a 1/4 cup of extra virgin olive oil, after 1 minute add in the diced onion and mix with the olive oil, after 2 minutes and the onions are translucent, add in the sliced mushrooms, continue to mix with the olive oil, after 1 minute add in the minced garlic and continue to mix, after cooking the mushrooms for 2 to 3 minutes add in the 1/2 cup of spring onion leaves and season with sea salt & black pepper, give it a quick mix, then add in 1 cup round rice, mix together and lightly toast the rice for 2 minutes, then add in 4 1/4 cups of vegetable broth, mix every 1 to 2 minutes

  3. 15 minutes after adding the broth into the pan, the rice should be perfectly cooked, you will notice there is still plenty of creamy broth left, that is normal, remove the pan from the heat, sprinkle with some chopped spring onion leaves and serve at once, enjoy!

    Very tasty, but mine didn’t turn out with a very creamy texture. Also I would have added a little less oil. I also added in some saffron, highly recommend that.
