Sesame Chicken Salad

You know how some recipes are so good that you forget they’re healthy? This is one of those. I may or may not (definitely yes, I am) be sitting at my desk eating my meal prepped container of this salad while I write this post. 

It’s perfect for making double batches and storing it in the fridge. That way you always have a fresh and wholesome chopped salad to reach for.

How to Cook the Chicken

You can either use leftover cooked chicken, some rotisserie chicken, or cook the chicken yourself! 

I like to cook a chicken breast in my Instant Pot. It usually takes 12 minutes of cook time and 10 minutes of a natural pressure release. 

Just remember that how fresh your cooked chicken is will affect how long this salad lasts in the fridge.

How to Eat This Salad

Not only is this salad delicious as-is, it’s also amazing in spring rolls or in a pita to make a wrap sandwich! You could also try serving it with some vermicelli or rice noodles if you want a more filling meal.

Optional Additions

I served this with a simple Asian Sesame Dressing, but it would also be incredible with a Sesame Ginger Dressing or a Peanut Dressing. Sometimes I add a bit of miso to the dressing to give it that umami flavor.

If you want to bulk this salad up a bit, some ingredients you could try adding are:

  • Quinoa
  • Orzo
  • Pasta

Some light and fresh additions you could try are:

  • Zoodles
  • Cucumber Noodles
  • Mandarin Oranges

How to Meal Prep This Salad

The only change I’d make for meal prepping this is to hold off on adding the avocado and sesame seeds until just before serving. It’s best to store it in an airtight container, and it should last for about 3 days in the refrigerator.

Sesame Chicken Salad

Ingredients

Dressing:

  • 1 Tablespoon tamari (or soy sauce if not gluten free)
  • 1 Tablespoon toasted sesame oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon olive oil (or neutral oil of choice)
  • 1 ½ teaspoons pure maple syrup

Salad:

  • 5 cups shredded cabbage (I use a combination of green and purple)
  • 1 ½ cups cooked shredded chicken (about 1 large chicken breast)
  • ¾ cup loosely packed fresh cilantro (chopped)
  • â…“ cup sliced green onions
  • ½ cup sliced almonds
  • ¼ cup matchstick carrots
  • 1 avocado (peeled, pit removed, and diced)
  • Sesame seeds (for topping)

Instructions

Asian Sesame Dressing:

  1. In a small bowl, combine all ingredients and stir to combine.

Sesame Chicken Salad:

  1. Add all salad ingredients together in a large bowl, then pour over the salad dressing and toss to coat.

Notes

The net carbs per serving for this recipe can be lowered to 5.4 grams by doing the following: substitute the maple syrup with keto maple syrup (or a mixture of powdered keto sweetener like Confectioner's Swerve and water), omit the carrots, and halve the sliced almonds to 1/4 cup.

I would recommend cutting the carrots into matchsticks and not grating them. If you grate them, they’ll dye the rest of the salad, so it won’t be as visually appealing.

Optional ingredients include mandarin oranges, wonton strips, and crunchy noodles.
