Why? Because this pot roast is done in a little over an hour. So, the best of both worlds.
Now, who doesn’t love that? Besides the beef, you can add potatoes and carrots and make it a full meal.
What Does Pot Roast Mean?
Pot roast is a meat dish that is usually made with a chuck roast of beef brisket.
The meat is stewed in lots of gravy to prevent the meat from drying out. A real slow cooker recipe that takes forever to cook.
Calculate at least 6 to 8 hours to make a classic roast.
You can add baby potatoes or cut up regular potatoes and add.
How To Cook Pot Roast
Usually, a pot roast is made with a Dutch oven or a cast-iron pan but can also be made in a Crock-Pot slow cooker.
Of course, you can cook this recipe in a pressure cooker.

Instant Pot Roast Ingredients
To make this beef roast recipe you need various ingredients. Not only for the beef but also for the rub.
Put the following ingredients on your grocery shopping list and have them ready when you start:
For the Pot Roast:
- Beef stew meat
- Onion
- Garlic
- Tomato paste
- Dark beer
- Beef broth
- Worcester sauce
- Olive oil
- Carrots
- Potatoes
Dry Rub:
- Dried crushed rosemary
- Dried thyme
- Garlic powder
- Onion powder
- Paprika
- Salt
- Black pepper
How To Make Instant Pot Roast
Start this recipe and finely chop the onion and mince the garlic. Set aside. Clean the potatoes and carrots and set them aside as well.
Take a small bowl and combine the ingredients for the roast rub and stir it through.
Sprinkle the mix on the beef and rub it on.
Prepare The Beef
Take the Instant Pot and select the SAUTÉ function. Pour olive oil into the heated pot.
Now add the seasoned beef to the pot and brown it on all sides. This takes 2 to 3 minutes per side.
Take the beef out of the pot and set it aside. Add the onions and garlic to the pot and stir until soft and translucent for 2 to 3 minutes.
Then add the tomato paste, beer, broth, and Worcestershire sauce.
Return the beef into the Instant Pot then put the cleaned carrots and the peeled potatoes on top.
Cook The Beef
Close the lid and secure put the valve in the sealing position. Select the Manual/Pressure Cook button and cook on high for 45 minutes.
When the cooking time is done let the Instant Pot natural release for 10 minutes before quickly releasing the remaining pressure in the pot.
Press Cancel. Take the beef out of the pan onto a cutting board and shred the beef.
Transfer the carrots and potatoes to a serving dish and cover with aluminum foil.
Make Gravy
If you want a thick gravy to take a small bowl and combine 1 tablespoon water with 1 tablespoon cornstarch.
Add 1 cup of water to the Instant Pot. Select the Sauté option before pouring in the cornstarch mixture.
Let it simmer for 5 minutes or until the gravy thickens
Serve the beef, potatoes, and carrots immediately with gravy.
Beer Alternatives In Stew
This recipe contains beer, a very dark beer. As the alcohol cooks off the result is not impacted by it.
However, not everybody loves to cook with beer. As an alternative, you can substitute beer with red wine into this recipe.
If you do not like to cook with either beer or wine you can use red grape juice as an alternative for this recipe.
Can You Make Instant Pot Pot Roast Ahead?
Yes, you can make this recipe ahead of time. Making it a couple of days ahead of time intensifies the flavors.

Crush the cooking time of your pot roast with this Instant Pot Pot Roast. In a little over an hour, you can have this recipe on the table. Delicious melt in your mount beef that is soft and juicy. Add potatoes and carrots for a full meal.
Ingredients
- 2-pound of chuck
- 2 tablespoons olive oil, divided
- 1 onion
- 1 garlic clove
- 2 tablespoons tomato paste
- ¾ cup dark beer you can substitute with red wine or red grape juice
- 1¼ cups beef broth
- ½ tablespoon Worcestershire sauce
- 3 carrots, peeled and cut into large 2" to 3" chunks
- 1 lb potatoes
For the Pot Roast Dry Rub:
- 1½ teaspoons dried crushed rosemary
- 1½ teaspoons dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoons sea salt
- Pinch fresh ground black pepper
