I love that time of the year when the amazing Fall/Winter produce is on display in the shops. There’s so much to choose from and everything is so so delicious. One of the vegetables I enjoy a lot (since my childhood) is leek.

I’m aware many of you are not fans, I’m actually the only one in our house that really loves leek. I’m still working on convincing the rest of my family how gorgeous it is. and to be honest, I’ve had a good progress, especially with my latest leek recipe – Cheesy Leek Muffins.

Cheesy Leek Muffins

The secret here is to gently soften the leek in a bit of butter, salt and pepper, then add it to the cheesy muffin mixture and it’s so left to the oven. These cheesy bites are best served warm and I wou;dn’t recommend keep them for more than 1-2 days. It’s really about that cheese and butter, combined with the sweet leek. 🤤

What you need:

  • self-raising flour
  • bicarbonate of soda
  • eggs
  • yogurt
  • leek
  • parsley
  • cheese
  • sunflower-oil
  • butter
  • salt and pepper

Here’s how to make these gorgeous Cheesy Leek Muffins

Ingredients:

  • 250g self-raising flour
  • 200g yogurt
  • 2 eggs
  • 100ml sunflower oil
  • 1tbsp butter
  • 1 leek, sliced
  • 120g mild Cheddar cheese, grated
  • 1tsp bicarbonate of soda
  • 30g fresh parsley, chopped
  • salt and pepper to taste
