So, what do you need for this tasty salad? The ingredient list below is just a base to start from. Add what you love and omit what you don’t.

  • Salad – choose a salad of mixed greens
  • Red onion – finely dice
  • Cherry tomatoes – dice into small pieces
  • Avocado – slice the avocado
  • Sunflower seed mix – to sprinkle on top of the salad
  • Cotija cheese – if you can’t find cotija you can substitute it with feta cheese
  • Olive oil – the base of the dressing
  • Mustard – to add to the dressing
  • Lime or lemon – use fresh juice to add to your dressing
  • Sugar – to sweeten the dressing
  • Black pepper – season to taste
  • Cilantro (optional)

How To Make Mexican Salad With Lime Dressing

  1. This salad recipe is so easy to make. Wash the mixed greens and let them drain. Set aside. Take a small bowl or mason jar and add the olive oil, mustard, lime, sugar, and black pepper.
  2. Whisk together until combined. If you do not have lime, you can easily substitute it with lemon juice. Put the mixed greens in a big bowl.
  3. Thinly slice the onion, half the cherry tomatoes, and dice the avocado. Add to the salad and toss. Sprinkle the sunflower seed mix on the salad and drizzle the salad dressing evenly on the salad.
  4. Again, toss to combine. Complete with some crumbled cotija cheese or feta if cotija cheese is not available.
  5. Your salad is ready to serve.

This delicious salad recipe is quick and easy to make. You can customize and add all of your favorite ingredients.

Even though I serve it mostly with Mexican recipes it fits perfectly as a side salad. Add some protein and you have a terrific main dish!

Give it some color with bell pepper or cherry tomatoes. These tomatoes are homegrown in my small backyard greenhouse. I just love the taste of fresh natural tomatoes. You can easily grow your own.

Just save the seeds from your favorite cherry tomato, put them in a pot, and put it on a sunny window sill. It is the best thing ever and you love this salad even more.

Mexican Salad With Lime Dressing

This delicious Mexican Salad with lime dressing recipe is so easy to make. Done in no time with all your favorite ingredients.

Ingredients

  • 5 ounces mixed greens
  • 1 small red onion
  • 10 cherry tomatoes
  • 1 avocado
  • 2-3 tablespoon sunflower seeds mix
  • 1/3 cup crumbled cotija cheese or feta
  • Fresh chopped cilantro
  • 3 tablespoons olive oil
  • 1 tablespoon lime or lemon juice
  • 1 tablespoon granulated sugar
  • 1 tablespoon Dijon mustard
  • Fresh ground black pepper to taste

Instructions

  1. Wash the greens let them drain and set aside
  2. Take a small bowl or mason jar and add the olive oil, lime juice, mustard, sugar, and black pepper. Whisk or shake until combined
  3. Finely slice the red onion, half the cherry tomatoes, and chop the avocado. Add to the salad
  4. Sprinkle the sunflower seed mix on top of the salad before you drizzle the dressing on the salad
  5. Toss to combine. Serve immediately
