  • Olive oil – base of the marinade
  • Orange juice – you can use fresh or packaged orange juice
  • Lemon juice – lime juice will work just as well
  • Garlic -mince fresh garlic
  • Seasoning – we season the marinade with fajita seasoning
  • Coriander powder – to season

How To Make Mexican Steak Marinade For Fajitas

  1. To make this recipe mince the garlic first and put it in a large bowl. Add the fajita seasoning and coriander powder. Then add the orange juice, lemon juice, and oil.
  2. Take a whisk to stir the ingredients together and toss to combine. Pour the marinade into a plastic ziplock bag and add your steak. Close the bag and make certain all of the meat is covered by the marinade.
  3. Put the bag in the fridge so the meat can marinate.
  4. When you are ready to grill you can take the beef out of the bag and prepare it in a cast-iron skillet.
  5. Season your steaks to taste with some salt and pepper when they are grilled.

How Long To Marinate Steak For Fajitas

It is really fast to make the marinade but you have to take at least half an hour to marinade to get a great flavor. If you have time, I recommend marinating steak between 2 to 8 hours.

As the marinade contains lemon it will change the texture of your steak if you leave it longer. Put the meat into the refrigerator when marinating.

Can I Make The Marinade Ahead Of Time?

Yes, you can but check the best-by date on your orange juice and the steak as well. I do not like to keep meat in the fridge for too long so I make it fresh.

If you want to make it ahead prepare the marinade 1 to 2 days before making the fajitas.

    Looks like a yummy marinade! Thanks for sharing.
    One comment- as someone who has been cooking for over 30 years, and also concerned about the environment, I’m always disappointed to see recipes encouraging the use of plastic bags for marinades. A good glass or stainless bowl with a plate on top, or a plastic container with a lid will work just fine…and is much easier to fork the meat out onto the skillet or grill. sometimes bags leak and make a mess. Most people I’ve seen using a plastic bag just throw the whole mess into the trash when done- a stinky yucky thing to send to the landfill. Washing oily dirty bags is a real chore. From my experience, although bags seems easy at first it is more of a problem in the long term.
