Puffed Quinoa Energy Balls

We were trying to find puffed quinoa for such a long time, but, unfortunately, where we live, none of the stores has it. On one of our recent trips to Hungary, we visited one of the best organic shops there and we’ve found quinoa puffs. Today’s recipe, Puffed Quinoa Energy Balls, is just the first in a raw that uses this amazing ingredient! 🙂

Quinoa Energy Balls
Quinoa puffs are a great source of protein with all nine essential amino acids. Besides that, they are high in fiber and rich in iron. 




 

 
Puffed Quinoa Energy Balls are 100% vegan, gluten-free, sugar-free, and dairy-free. They are full of healthy fats, protein (from quinoa puffs and almond butter), and enough calories to be a perfect bite snack.

Puffed Quinoa Energy Bites
Prep time: 2 min   Cook time: 5 min   Total: 7 min   Servings: 5-6




 

 

INGREDIENTS

  • 2.6 oz (75 g) of pitted soft Medjool dates (about 10 medium size dates)
  • 1/3 cup (80 g) of almond butter
  • 2/3 cup (25 g) quinoa puffs
  • 1/3 cup (about 30 g) of slivered almonds

INSTRUCTIONS

  • Add dates to a food processor and process on high until the paste is formed.
  • Add slivered almonds and almond flour and process again until a dough begins to form. If the mixture is too dry add 1 teaspoon of non-dairy milk, we haven’t added anything. For this recipe, we processed until all the ingredients are completely ground and the soft dough without chunks is formed. When done, transfer the dough to a mixing bowl and add quinoa puffs. Use your hands to evenly incorporate the puffs into the dough.
  • Form mixture into balls and repeat until no dough remains.

NOTES

  • Try to use soft dates (100% dates without any artificial sugars added). If you are using very dry dates then soak them in the water for about 10-15 min
  • We got 12 vegan puffed quinoa energy balls from this mixture.
