This tender and juicy oven baked BBQ chicken legs recipe is delicious, so easy and only takes less than 1 hour to make. Makes a perfect after work dinner!

Almost every Saturday we have guests over for dinner. We just love having people around who also enjoy food just like us.

Last Saturday our friend Natalia came over for dinner with her husband and their teenage son, Miguel. I made lots of food including these baked chicken thighs and drumsticks.

But Miguel and his dad were just eating chicken thighs and legs dipped in a BBQ sauce (from this recipe, I just cooked it down until the sauce was nicely thick and rich.). A few days later Natalia sent a text asking for the recipe. I promised her to send it this weekend.

The chicken thighs and drumsticks are loaded with flavors from salt, smoked paprika, cumin, pepper, garlic, onion, parsley and olive oil!

What you’ll need to make roasted chicken legs (thighs and drumsticks)

  • 6 chicken quarters (1.6 kg/ 3 ½ lbs)
  • 1 tablespoon smoked paprika
  • ½ teaspoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon ground pepper
  • 4 tablespoons olive oil
  • 1 tablespoon dried parsley
  • 1 tablespoon onion powder
  • 2 teaspoons salt

How to make baked chicken thighs and drumstick recipe

Preheat the oven to 250 ° C (482 °F), with both top and bottom heat. Pat dry chicken quarters with pepper towels and separate them into thighs and drumsticks.

Transfer the chicken to a bowl or container and add all the seasonings. Mix together nicely the meat and seasonings with your hands.

Transfer the meat onto a greased baking sheet and bake for about 35 minutes. Turn the meat halfway.

After 35 minutes switch off the oven and let the chicken be inside the still warm oven for 5 minutes, before serving. Enjoy!

Another winner! This oven-baked chicken is delicious, the skin is so crispy and yummy it is hard to resist, the chicken is tender and juicy, and it doesn't seem possible that it comes out this well with so little work. Seriously, good enough for company, without the stress of cooking for company!
