Happy Wednesday guys! Today’s recipe is Harissa Roasted Pumpkin Burrito – spicy vegetarian burrito, packed with goodies.

What you need:

  • pumpkin
  • harissa
  • tortilla wraps
  • avocado
  • pinto beans
  • feta cheese
  • sour cream
  • coriander, if wished

The main hero here is the pumpkin, so make sure to roast it really well with lots of harissa, olive oil and salt. You can opt for Cheddar cheese but I think that pumpkin and feta cheese is just the perfect marriage .

Here’s how to make this yummy Harissa Roasted Pumpkin Burrito

Ingredients:

For the Harissa Roasted Pumpkin:

  • 300g pumpkin, cut into cubes
  • 2tbsp harissa
  • 1tbsp olive oil
  • salt

For the Burrito:

  • 2-3 tortilla wraps, depending on how big you make the burritos
  • 1 avocado, pitted and sliced
  • 200g pinto beans, tinned
  • 120g feta cheese, crumbled
  • 2 tbsp sour cream
  • fresh chopped coriander, if wished

Preparation:

  • Preheat the oven to 200C.
  • In a baking tray, arrange the pumpkin cubes, drizzle with olive oil, sprinkle the harissa and salt and mix well.
  • Bake in the oven for about 20 minutes, turning the pumpkin halfway. Leave to cool.
  • To make the burritos, add a line of the harissa pumpkin, then pinto beans and avocado. Sprinkle a bit of the feta cheese and fresh coriander, if wished. Add a spoon of sour cream and wrap it up.
  • Serve with some tortilla chips on a side.
