The Best Shrimp Salad

This recipe is so easy to make, it won’t take more than 15 minutes of your time. It’s a great and fulfilling, packed with all the nutrients, perfect for lunch or dinner. Kids love this kind of salads. Even if your kid is not a fan of salads, this one is perfect – they’ll ask for more. 🙂 
Shrimp Salad
Shrimps are the highlight of this amazing salad. We decided to cook them in tamari, olive oil, and water on medium heat. They are done in just 5 minutes. I cannot express enough how good these shrimps are. Even if you don’t want to use them in a salad, they are perfect with some quinoa or rice on aside, or maybe baked potatoes.




 

 
This recipe contains dairy and it’s not vegan! If you have food allergies to dairy skip mozzarella and add some non-dairy cheese instead.

INGREDIENTS

  • 2 handfuls of fresh mixed greens salad of your choice (arugula, red and green lettuce, Valerianella locusta (corn salad)) 
  • 4.23 oz (120 g) shrimps (prawns)
  • 5 small cherry tomatoes (red and yellow)
  • 3 mini mozzarella balls cut in half
  • 1/4 sliced avocado
  • 1/4 cup chopped walnuts
  • about 1 tablespoon chopped cilantro leaves
  • 1 teaspoon of olive oil (for shrimps frying)
  • 2 tablespoons tamari sauce

DRESSING

  • 1 tablespoon lemon juice
  • 1 tablespoon flaxseed oil
  • black pepper (to taste)

INSTRUCTIONS

  • We are not going to add instructions on how to cook quinoa, we assume that you already know that. For this recipe, you’ll need cooked, room temperature, quinoa.
  • Into a large saucepan add olive oil, tamari, shrimps, and about 50 ml of water and put over medium heat. Cook for about 3 minutes and add chopped cilantro. Stir well. Cook for another 2 minutes or until all the liquids dissolve. Remove from the heat and set aside. 
  • Prepare the vegetables. In a shallow dish add all the leafy greens as a first layer. Then, add cherry tomatoes (cut into halves), mozzarella, and chopped walnuts. Add cooked shrimps on top and garnish with a few avocado slices. 
  • Add all the dressing ingredients into a small bowl, mix well, and pour over the salad.
