Cherry Popsicles

Hands down, popsicles are my favorite no-bake treat. Especially fruit and Greek yogurt popsicles. They’re so good and just ridiculously easy!

You can use any fruit you like, but I definitely prefer using fresh fruit. That way I don’t have to add any water to the blender to help it puree, which means less ice formation in the popsicles. I like to swirl it into vanilla Greek yogurt with a little swirl of honey – all the different pockets of flavor are the best!

I’m so happy to partner with BUBBL’R to bring you this easy no-bake dessert recipe. Cherries are my favorite fruit to use in these popsicles, and I definitely recommend serving them with an ice cold can of cherry guava blend’r BUBBL’R. You can find out where to buy BUBBL’R here.

Optional Add-Ins and Substitutions

There are so many ways you can play with the flavors in these popsicles!

My favorite is to add a thin layer of granola just before adding the popsicle stick. I’m especially fond of using granola with a bit of chocolate in it.

It reminds me of an elevated homemade version of the strawberry shortcake popsicles I loved when I was growing up.

Here are some other flavors to consider for your homemade popsicles:

  • Lime
  • Limeade
  • Lemonade
  • Coconut Milk
  • Orange
  • Sangria
  • Vanilla
  • Watermelon
  • Chocolate
  • Banana
  • Honey
  • Kiwi
  • Blackberry
  • Blueberry
  • Lemon
  • Nutella
  • Nectarines
  • Peach
  • Raspberry

What You’ll Need

You’ll need two tools for this recipe. The first is a blender or food processor (I love using my high speed blender for these popsicles), and you’ll need a good popsicle mold.

If you think you’ll be making popsicles frequently, I recommend investing in a better popsicle mold. I’ve used both the really inexpensive ones and the better quality ones, and it’s one of those kitchen tools where the quality matters.

Prep Time 10 minutes
Additional Time 3 hours
Total Time 3 hours 10 minutes

Ingredients

  • 1 cup cherries (fresh, halved, and pitted, 175 grams - about 1 1/2 cups frozen)
  • 2 cups full-fat vanilla Greek yogurt (580 grams)
  • 3 Tablespoons honey (62 grams)

Instructions

  1. Blend cherries until mostly pureed. A few medium chunks are OK.
  2. In a medium mixing bowl, add the Greek yogurt and honey. Mix until combined.
  3. Pour the cherry puree into the yogurt mixture and gently fold until just barely combined enough. It’s very easy to stir too much and fully mix the puree into the yogurt, which won’t give you the swirly texture in the photos.
  4. Using a 1/4 cup measuring cup, scoop the mixture evenly into 10 popsicle molds. 1/4 cup won’t be quite enough to fill it, but 1/3 cup is too much. Once you’ve added the 1/4 cup to each mold, go back and spoon the remaining mixture into the molds to fill the empty space.
  5. Freeze for one hour, then insert the popsicle sticks. Push the popsicle sticks far enough down that you’ll be able to pull the popsicles out later, but not so far that you don’t have enough of a handle to enjoy your popsicle.
  6. Freeze for a minimum of 3 additional hours, or until the popsicles are frozen through.
  7. Run the mold until warm water to loosen the popsicles from the mold and gently wiggle each popsicle out of the mold.
  8. Serve immediately, or place them on a parchment paper lined baking sheet and freeze again to refreeze the edges. Store them in an airtight freezer friendly container or bag.

Notes

Fresh cherries are best because they’re soft and don’t require any additional liquid to blend them.

  1. If I’m using frozen cherries, should I add some water before puréing? If so, how much would you recommend?

    • Hi Phyllis, I’d probably add a little bit of heavy cream before blending the frozen cherries (just because frozen cream has a better/less crystalized texture than frozen water). I would just add a little at a time until your machine is able to blend the cherries (I’d use as little as possible). Hope that helps! -Alexa
