Croissant Sandwich With Homegrown Spinach
This sandwich tastes even better as I made it with home-grown spinach.
Another super easy vegetable that you can grow in your kitchen garden, window sill, or balcony. You can even grow spinach in pots.
Spinach is a vegetable that doesn’t like too much heat so you can grow it in spring or fall depending on what your season looks like.
If it is too warm spinach will bolt and go to seed. What I like about growing my own vegetables is you take what you need.
So, no spinach going to waste in the fridge that you have to throw away. So, if you have a little space start growing your own vegetables.
Croissant Sandwich Ingredients
To make this sandwich recipe you need several ingredients. Have the following ready when you start:
- Croissants
- Eggs
- Spinach
- Pesto
- Slices turkey
- Onion
- Mushrooms
- Butter
- Olive oil
How To Make A Croissant Sandwich
To make this recipe you start with boiling the eggs for 6 minutes. When done drain the water and put the eggs in ice-cold water to make peeling the eggs easier.
Finely chopping the onion. Take a skillet and preheat the olive oil.
Add the onion, stir and move around the pan until soft and translucent before you add the spinach and sauté until soft as well.
Now take a separate pan and heat the butter. Add the sliced mushroom and stir until browned this takes 3 to 4 minutes.
Cut the croissant lengthways. Spread the green pesto on the croissant, and stack with slices of turkey
Put the cooked spinach on top, then the mushrooms, peel the boiled eggs, slice, and put on top of the spinach.
Serve immediately.
Croissant Sandwich Ingredient Options
This sandwich is really complete but you can mix it up even more. For inspiration some great ingredient options:
- Sun-dried tomatoes – you can make sun-dried tomatoes very easily in the oven. Take a look at the recipe for sun-dried tomatoes over on our other website the Tortilla Channel
- Bacon – either in strips or cut bacon in small cubes. Pan fry and add to the spinach
- Cheese – choose your favorite shredded cheese like mozzarella, cheddar, or parmesan and sprinkle on top of the mushrooms
- Ham – substitute the turkey for ham it will be fattier but also a great ingredient on your sandwich
- Bell pepper – finely diced and sauté together with the onions
- Red onion – add some diced red pepper looks decorative and is a tasty addition

A great lunch or brunch recipe this croissant sandwich is filled with spinach and mushrooms. Easy to make and something different than your regular sandwich recipe.
Ingredients
- 2 croissants
- 2 eggs
- 3 tablespoons green pesto
- 2 cups spinach
- 4 slices turkey
- 1 onion
- 4 mushrooms sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
Instructions

- Put the cooked spinach and mushrooms on top
- Drain the eggs and put in ice cold water. Peel the eggs, slice and put on top of the spinach
- Serve immediately
