Before I got a Multicooker I would prepare my whole chicken in the oven. Usually in a medium to hot oven to get crispy skin.
Slow Cooker Whole Chicken
The down effect of cooking like this is the chicken gets really dry. Especially the breast and legs can get really dry.
This is a shame because these are the tastiest parts of the chicken.
Using an Instant pot or Crockpot Express, this problem is now resolved because cooking a whole chicken in a Crockpot result in soft and tender chicken.
The Crockpot Express is a multi-cooker similar to the Instant Pot and can be used as a slow cooker or a high-pressure cooker.
In this recipe, I used the slow cooker option.
All the moist stays within the pot and that is the main reason why the meat is so tender. But what about the skin?
If you cook chicken in a slow cooker the skin will stay soft. Fortunately, this can be resolved. Turn on your broiler.
Let it get hot and put the chicken underneath the broiler for about 5 minutes. This will be enough to turn the skin all crispy but will not dry out the chicken.
This recipe is low carb and fits a low carb or keto diet.

Instant Whole Chicken Ingredients
What do you need to get for this rotisserie-style chicken recipe? Put the following ingredients on your list:
- Whole chicken
- Onion
- Garlic
- Cooking spray (alternative olive oil)
- Lemon juice
- Water
- Cornstarch
Seasoning:
- Paprika powder
- Garlic powder
- Onion powder
- Parsley
- Thyme
- Oregano
- Salt
- Black pepper
How To Make Instant Pot Slow Cooked Whole Chicken
To make this slow cooker whole chicken start with a trick that I learn from my father is to rub the skin with lemon.
This gives the skin a different taste once it is cooked. It is important to pat the skin dry with some paper towels.
Spray the whole chicken with cooking spray and brush to make certain all the chicken is covered with oil.
Now put the seasoning together and rub the chicken with the seasoning. I usually use my hand to cover the chicken in seasoning.
You can also do this with a teaspoon. Put the rack in the Crockpot. I usually add two tablespoons of water in the Crockpot.
If you are going to use the gravy from the chicken then you can add two tablespoons of chicken broth instead of water.
Now place the chicken on the rack. Close the lid and turn on the Crockpot. You have two options:
- Slow cook on High for 3 to 4 hours
- Slow cook on Low for 6 to 7 hours
I usually check for around 3 hours to see if the chicken is done. When you leave it in at 4 hours your chicken might be so tender it falls apart.
Take out of the Crockpot and heat the broiler. Put your whole chicken under the broiler for 5 minutes to crisp up the skin.
To make the gravy set the Crockpot to brown/sauté. Sieve the gravy and return to the Crockpot. Add the finely chopped garlic and onion and stir through.
Combine 1-2 teaspoons of cornstarch with 2 teaspoons of water. Add to the gravy and stir again. Let it cook for 5 minutes and you are done.
How To Make Instant Pot Whole Chicken
If you have an Instant pot or a Crockpot Express you have the option to make this recipe under High Pressure.
It takes a slightly different approach when you use the High-Pressure option.
You then need to brown the chicken first in olive oil using the Brown/Sauté option.
Brown the whole chick on both sides so it gets some color. This takes 5 to 8 minutes. Put the chicken on the trivet.
Then sprinkle the seasoning on the chicken. Use a brush to rub the seasoning on the chicken.
Because you need water to get an Instant pot too high pressure you have to add about 1 cup of chicken broth.
Now add the chopped garlic and onion to the chicken as well. Put the lid on the multicooker and turn the steam release valve to seal.
Then turn the Instant pot to Poultry and set the time to 30 minutes. Quick-release the Instant pot when the timer is done.
If you want crisp chicken skin then put the cooked chicken under the broiler for 5 minutes.
To prepare the gravy read the instructions above. You only need to add a little cornstarch to get a thicker gravy.
How To Store Instant Pot Chicken
You can make this chicken ahead of time or you have leftover chicken you have a number of options to store the chicken:
- Refrigerator – you can put the chicken in a plastic airtight container for 2 to 3 days
- Freezer – if you want to store the chicken in the freezer put it in a freezer friendly bag or airtight container

Instant Pot Whole Chicken
This fall off the bone Instant Pot whole chicken is amazing. Juicy seasoned chicken that is full of flavor. You can slow cook it in the Instant Pot or make it fast. Either way it is the best chicken you ever had.
Ingredients
- 1 small chicken (3-4lbs/2kg)
- 1 slice of lemon
- ½ onion
- 2 garlic cloves
- PAM cooking spray
- 1 cup chicken broth (optional)
- Seasoning:
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¾ teaspoon parsley
- ½ teaspoon thyme
- ½ teaspoon oregano
- Pinch of salt (or to taste)
- ½ teaspoon black pepper (or to taste)
Instructions
- Rub the chicken with lemon. Spray cooking spray on the chicken.
- Combine the spices into a seasoning. Rub the seasoning on the chicken
- Put the rack in the Crockpot. Add two tablespoons of water. If you are going to use the gravy replace the water with chicken broth
- Close the lid and set to Slow Cook for 3 to 4 hours. Check at 3 hours to see if the chicken is done
- Turn on the broiler and broil the chicken for 5 minutes
Notes
- You can also cook the chicken on high pressure
