It is summer time and what is better than an ice cold popscile to beat the heat. Only thing better than that is a frozen yogurt popsicle and what is even better is a Dairy Free Frozen Yogurt Popsicle!

This recipe takes 5 minutes to whip up. The only thing is you wil have to wait for two hours or longer for it to freeze. When blending you might need to add liquid if it gets difficult to blend.

The strawberries can be fresh or frozen. The frozen strawberries will help the popsicle to freeze faster than the fresh ones. This recipe uses strawberries but other seasonal fruits are a good choice as well.

Ingredients

Adjust Servings:

3 cups fresh or frozen strawberries

3/4 cup plain dairy free yogurt

1 teaspoon vanilla extract

4 tablespoons maple syrup

fresh mint (optional)

water or dairy free milk, as required (see cook's note)

Wash hands with soap and water for 20 seconds.

Add all of the ingredients into a high speed blender or food processor and blend until smooth and creamy. Adjust the sweetness to taste. (see cook's note)

Pour into pospsicle molds, place the lids and put in the freezer for 2 hours or until the yogurt is fully frozen. Just before serving run the popsicle mold under hot water for a few seconds to loosen the popsicle. Enjoy!

Cook Notes

  • You may need to add a little water or dairy free milk to the blender so that it blends well.
  • Try honey instead of maple syrup.
  • Substitute strawberries for any other fruit you like.
