Creamy and smooth homemade vanilla ice cream with edible homemade chocolate chip cookie dough all though out the ice cream. This delicious creamy summer treat tastes just like a classic chocolate chip cookie dough ice cream. And the cookie dough is completely edible, with no eggs involved in the dough. There is no need to use a ice cream maker to make the ice cream portion of this dessert. Just a bowl and mixer are needed to make this sweet summer treat.

The homemade edible cookie dough is made by beating butter with both granulated and brown sugar with a mixer until it is light and fluffy. Pour milk and vanilla extract into the butter mixture and beat again until it is smooth. The flour is heated in the microwave for 40 seconds to make the cookie dough more safe to eat. Pour the heated flour into the wet ingredients and beat again until all of the flour is incorporated. Fold the mini chocolate chips into the cookie dough with a spatula. Roll the cookie dough into small bite sized balls and set aside. For the ice cream portion, heavy whipping cream is beat with a mixer until stiff peaks form. Fold the sweetened condensed milk, vanilla extract and the cookie dough balls into the ice cream. Pour the ice cream mixture into a large freezer safe container and freeze for at least 4 hours, until it is frozen solid.

Ingredients
  

  • 2 cups heavy whipping cream
  • 1 ( 14 oz.) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup mini chocolate chips

Instructions
 

  • For the chocolate chip cookie dough, place flour into a medium bowl and microwave for 40 seconds. In a large bowl, with a mixer, beat softened butter with both sugars until light and fluffy. Add in milk and vanilla extract, beat until smooth. Add in flour and beat until all of the flour is incorporated. Fold in chocolate chips. Roll cookie dough into small balls.
  • Beat heavy whipping cream in a large bowl with a mixer until stiff peaks form. Fold in sweetened condensed milk, vanilla extract and cookie dough balls. Pour mixture into a large freezer safe container. Freeze for at least 4 hours.
