Yellow Basmati Rice With Cheese

Absolutely delicious and easy to follow yellow basmati rice with turmeric and cheese. Such a great recipe with lots of room for customization. 

Made with a handful of uncomplicated ingredients: ground turmeric, vinegar, vegetable stock, grated cheese, basmati rice, onion and garlic. Tastes great as a meal on its own or paired with any meat or vegetable dish of your choice.

This yellow basmati rice with turmeric and cheese is a family favorite. It’s easy, quick and packed with flavors.

The first time I made it, I actually wanted to make risotto, but I didn’t have risotto rice and saffron at home, so I ended up making yellow rice with basmati rice, cheese, onion, garlic and vegetable stock (though sometimes I use chicken stock).

It tasted so good such that my husband and I thought this turmeric rice with cheese was a great alternative to risotto. And the bonus is no constant stirring was required. The rice astes great served with jerk chicken, wors stew or as a meal on it own.

What you’ll need to make garlic turmeric rice with cheese

  • 1 small onion
  • 2 garlic cloves
  • 350 ml (12 fl oz/ 1 ½ cups) vegetable stock
  • 1 teaspoon turmeric powder
  • 1 tablespoon white wine vinegar
  • 200 g (7.1 oz/ about 1 cup) basmati rice
  • 2 tablespoons butter
  • a handful grated cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper

How to make yellow rice with turmeric and cheese

Begin by cleaning rice. Simply put rice in a bowl and add cold running water. Stir the rice around with your hands and drain. Repeat the process for two to three times.

Next, peel and mince onion and garlic. Then melt butter in the pot over medium heat and cook onion and garlic for about 5 minutes or until soft.

Add drained rice, vinegar, turmeric powder, about a 1/2 teaspoon salt and vegetable stock and mix well.

Cover and bring to a boil over medium high heat. Once the water starts to boil, without removing or lifting up the lid, reduce the heat to medium low and let cook for 10 minutes.

After 10 minutes remove the pot from the heat and let sit for 10 minutes.

After add grated cheese and use a fork and fluff the rice. Enjoy!

Notes

  • Feel free to substitute vegetable stock with chicken stock. Also use any grated cheese of your choice.
