To prepare this spinach quesadilla recipe you need several ingredients. Put the following on your grocery shopping list:

  • Tortillas – you can use medium to big-size flour tortillas
  • Cheese – select your favorite grated cheese like Gouda, mozzarella or Gruyere
  • Spinach – fresh spinach
  • Tomatoes – I use sun-dried tomatoes as they have more flavor and hold less water
  • Seasoning – give the quesadilla more taste with quesadilla seasoning
  • Onion – finely dice
  • Garlic – mince fresh garlic
  • Olive oil – for cooking the quesadilla
  • Salt and pepper – to taste

How To Make Spinach Quesadillas

  1. To make this quesadilla recipe start you can start by preheating a skillet with olive oil over medium heat. Finely chop the onion and mince the garlic.
  2. First, add the onion to the skillet. Stir continuously to soften the onion then add the garlic and keep on stirring. This takes 3-5 minutes.
  3. Add the spinach to the skillet and let it wilt in the pan. Stir to combine with the onion mixture until all of the spinach wilted.
  4. Season the spinach with salt and pepper and the quesadilla seasoning. Stir and set the pan aside. Dice the sun-dried tomatoes. Heat a skillet and add olive oil over medium heat before you add a tortilla to the pan.
  5. Divide the spinach into four equal parts and scoop ¼ of the spinach into the middle of the tortilla in a long strip. Add ¼ of the sun-dried tomatoes to the spinach.
  6. Sprinkle cheese on top of the spinach and fold the flour tortilla in three. Bake the tortilla until brown this takes about a minute. Flip the folded tortilla and bake the other side until brown.
  7. Take out of the pan and cut into wedges. Repeat for the remaining tortillas.

    I’ve never used garlic or seasoning in a quesadilla – this sounds wonderful and so flavorful!
