I had a whole tray of baked potatoes that for some reason everyone refused to eat so I had to come up with a tasty idea to turn them into something else.

I know the kids like these potato cakes but I have never posted them on here. They are super super easy, quick and so yummy. Aslo, there is just one main ingredient – potatoes, the rest of it is herbs, spices and butter.

What you need:

  • baked/boiled potatoes
  • garlic
  • dill
  • butter
  • salt and pepper
  • sunflower oil for frying

Here’s how to make these delicious Leftover Potato Cakes

Ingredients:

  • 700g potatoes, baked or boiled
  • 3 garlic cloves, crushed
  • 50g fresh dill, chopped
  • 80g butter
  • salt and pepper
  • sunflower oil for frying

Preparation:

  • Combine the ingredients together and blend the mixture to a smooth consistency.
  • Shape small cakes and fry them in a pan with heated oil for 3-4 minutes on each side or until golden.
  • Serve warm with sour cream.
