Happy Tuesday guys! Recipe of the day is Ham & Cheese Potato Bake – quick, easy and delicious, perfect for breakfast, lunch or dinner.

Ham & Cheese Potato Bake

What you need:

  • potatoes
  • ham
  • cheese
  • dill
  • an egg
  • salt and pepper
  • butter
  • milk
  • sour cream for serving
Ham & Cheese Potato Bake

This recipe is perfect to use up any leftover potatoes. Baked potatoes work fine too, just mash them up with butter and milk and season them to taste.

The addition of dill nakes this bake quite fresh and Summer-y tasting, if you know what I mean.

For some reason, the smell of fresh dill always reminds of Summer. 🙂

The Ham & Cheese Potato Bake is delicious when enjoyed warm with a bit of sour cream. But it is entirely up to you and your taste how to serve it.

Here’s how to make the Ham & Cheese Potato Bake

Ingredients:

  • 4-5 boiled potatoes
  • 200g ham, chopped
  • 200g mild Cheddar cheese, grated
  • 1 egg
  • 30g fresh dill, chopped
  • 50g butter
  • 100ml milk
  • salt and pepper to taste
  • sour cream, for serving
Ham & Cheese Potato Bake

Preparation:

  • Preheat the oven to 200°C.
  • Mash the potatoes with milk, butter and salt. Add the dill, season with salt and pepper to taste and transfer half of the mixture to a greased baking tray.
  • Add the chopped ham and grated cheese and cover with the rest of the mixture.
  • Bake in the oven for about 20 minutes until golden.
  • Serve with sour cream.
