There is a tiny secret to baking crispy French fries in the oven. It is really easy and I will share it with you today. Season with the best French fry seasoning and you will have a good day. So, are you ready to learn how to make crispy French fries? Let’s get started!
What You Need For This Recipe
To make this potato recipe you need a handful of ingredients. Have the following ingredients ready when you start:
- Potatoes – I like to use a starchy potato like Yukon gold because they get crispy on the outside and remain soft on the inside
- Cornstarch – to get that crunchy exterior
- Cooking spray – to spray the baking sheet
- Vegetable oil – to let the fries cook in the oven
- Seasoning – you can season with salt or use some French fry seasoning
- Water – to dissolve the cornstarch

How To Make Crispy French Fries
- Start with peeling the potatoes and wash them in cold water. Dry the potatoes with a clean kitchen towel. Thinly slice the potatoes into fries.
- Put the cornstarch and water in a pan and stir to completely dissolve the cornstarch. Warm the pan until the cornstarch mixture has a pudding-like consistency or heat in the microwave in 25-sec bursts.
- When done add the fries and stir them through the mixture. You can use a spoon or your hands to cover the fries.
- Spray a baking sheet with cooking spray before adding the vegetable oil. Move the baking sheet around so the oil can cover the baking sheet.
- Put the potatoes on the baking and leave space. Do not crowd or overlap the fries. Take a piece of aluminum foil and spray it with cooking spray.
- Cover the baking sheet with foil. Preheat the oven to 425℉/212℃. Cook them in the oven lowest rack, for 12 minutes.
- Then remove the foil and bake for an additional 10 minutes. Take the tray out of the oven and flip the fries to bake the other side as well for 8-10 minutes.
- Take out of the oven and sprinkle with salt or French fry seasoning.
French Fries Recipe
Getting crispy French fries from the oven takes a little bit more than coating the potato with a bit of oil. I have made them in the oven this way many times but after trying today’s secrets nothing can rival the crispness of these Pommes Frites.

Should You Soak Potatoes Before Frying?
I strongly recommend rinsing your potatoes before frying them in the oven. Rinsing the potatoes will remove the natural starch. You are going to add starch again but this coating will make your fries crisper.
What Type of Potato Is Best For French Fries?
Ideally, you use potatoes that turn golden brown when fried either in oil or in the oven and are still soft on the inside without being oily.
Getting great fries largely depends on which potato you choose. Great potatoes for frying are:
- Russet Burbank
- Yukon gold
- Maris Piper
It is also very important to wash and dry your potatoes or cut fries. Use a clean kitchen towel to dry your potatoes.
How To Store French Fries
There are two ways to store your fresh French fries:
- Refrigerator – you can store cooked them in the fridge for 3 to 5 days. The best way to store it is in an airtight container. You can also wrap them in heavy aluminum foil or plastic wrap
- Freezer – you can also store cooked fries in the freezer for 10 to 12 months. Again, store them in an airtight container or freezer-friendly ziplock bag
Why Are My Fries Greasy?
It is all the result of the type of potato and how you handle them. Choose the right potato, the right potato, and steam. You need some steam to cook the fries so the inside can get soft and not soggy or greasy.
That is why we bake the French fries covered with aluminum foil first before letting them crisp up in the oven.

Crispy French Fries
Crispy French Fries are the best. Baked in the oven with cornstarch, steam and oil. A great side dish. Seasoned with French Fry seasoning.
Ingredients
- 1 pound Yukon gold potatoes
- 3 tablespoon vegetable oil
- 1 tablespoons cornstarch
- ¼ cup of water
- 1-2 sprays with cooking spray
- 1-2 tablespoons French fries seasoning
Instructions
- Peel potatoes and wash in cold water. Dry the potatoes with a clean kitchen towel. Slice into fries
- Put cornstarch and water in a bowl and stir to completely dissolve the cornstarch
- Slowly warm in the pan until the cornstarch has a pudding-like consistency or heat in the microwave in 25-sec bursts
- When done add the fries and cover them in the mixture. You can use a spoon or your hands to cover the fries
- Spray a baking sheet with cooking spray before adding the vegetable oil. Move the baking sheet around so the oil can cover the baking sheet
- Put the potatoes on the baking and leave space. Do not crowd or overlap the fries
- Take a piece of aluminum foil and spray with cooking spray. Cover the baking sheet with the foil
- Preheat the oven to 425℉. Cook the fries in the oven lowest rack if possible for 12 minutes
- Remove the foil and bake for an additional 10 minutes. Take the tray out of the oven and flip the fries to bake the other side as well for 8-10 minutes
- Take out of the oven and sprinkle with salt or French fries seasoning
