Easy French Crepes Recipe
Today we are making the most delicious French crepes. Just like you can eat on every street corner in Paris.
They originate from the north of France but are now widely available across France.
Nowhere days crepe stands are a real tourist attraction and you can find them everywhere when you visit Paris.
Crepes are made on a special French crepe pan. It is totally flat and doesn’t have any edges.
This makes it very easy to flip the thin pancake.
Types Of French Crepes
There are two types of crepes:
- Sweet crepes are also known as crepes sucrose
- Savory crepes are also known as crepe salees or a galette
What Is The Difference Between Crepes And Pancakes?
The main difference between crepe and pancakes is that pancakes contain a leavening agent and crepe doesn’t.
So, pancake mix contains either baking powder or baking soda and crepe batter is made with plain flour.
Pancakes are thicker and fluffier as a result while crepes are thin and flat.
How To Make Smooth French Crepe Batter
To get ultra-thin pancakes you need a very thing batter as well. Compared to a pancake the batter is twice as thin as regular pancakes.
As you do not use a leavening agent in the crepe batter it doesn’t need any time to rest or activate the leavening agent.
The best way to get a smooth and creamy batter is to use a blender. It will also prevent lumps in your batter.
You can whisk the batter by hand but it will take longer to get a lump-free batter. So, if you have a blender or food processor use it to make the batter.
French Crepe Ingredients
To make this thin pancake recipe you will have most likely all ingredients in your kitchen cabinets.
Be sure to have the following ingredients ready when you start:
- Flour
- Milk
- Butter
- Eggs
- Granulated sugar
- Salt
How To Make French Crepe
To make this recipe take your blender, food processor, or bowl and add the flour, eggs, milk, melted butter, salt, and sugar in.
Start the blender and run-it on low speed before you increase too high. Run the blender for half a minute until you have a smooth creamy batter.
If you mix the batter by hand, you can use a whisk and beat the crepe batter until creamy and smooth.
Preheat a cast-iron skillet or nonstick pan over medium heat. Add a knob of butter and brush the pan.
Take a small ladle and pour batter into the pan. Swirling the batter to cover the bottom of the pan into a thin crepe.
It takes no more than half a minute to 1 minute to cook one side of the crepe.
As soon as the crepe is dry and lightly golden you can flip it with a spatula. Cook the other side for about 20-30 seconds.
Take the pancake out of the pan and put it on a plate. You crepe should be dry and easy to bend.
Repeat for remaining batter. Decorate with icing sugar, Nutella, cream fruit, and serve immediately.
How To Store Crepes
Preferably you eat crepes warm and straight out of the pan. But you can also eat them cold.
There are a number of ways to store crepes:
- Refrigerate – you can store crepes in the refrigerator. Just put them on a plate, let them cool completely, and cover with cling film. Store up to 2 to 3 days
- Freeze – you can also freeze your crepes. Let them cool completely, put in a ziplock bag and store in the freezer for up to 3 months
How To Reheat French Crepes
You have several ways to reheat your crepes.
- Skillet – an easy way to reheat leftover crepes is to use a cast-iron skillet, nonstick crepe pan, or comal. Preheat to medium-hot and add about a teaspoon of butter. Then add a crepe and let it warm for a minute, flip and warm the other side. Serve immediately
- Oven – you can also warm your crepes in the oven. Preheat the oven to 375℉. Fold the crepes into a quarter and wrap one or more crepes in aluminum foil. Heat in the oven for 7 minutes or until warm. Serve immediately
- Air Fryer – you can also heat your crepes in an Air Fryer. Preheat to 350℉ while you fold the crepes and wrap them in aluminum foil. Heat for 4 to 5 minutes
- Microwave – finally you can also heat the French crepes in the microwave. Add one or more crepes on a plate and cover them with perforated plastic wrap. Heat for 1 minute on max and check if the crepes are hot. If not add an additional 30 seconds
Should Crepes Be Served Hot Or Cold?
When a crepe contains a sweet filling, they are usually served for dessert or for breakfast. Sweet dessert crepes can be served hot or cold.
When a crepe contains a savory filling, you serve a crepe hot.
How To Eat A Crepe
The best way to eat your crepe is to add your favorite toppings on your crepe. Then fold the crepe so you have a half-moon.
Fold it again so you get a triangle or a wedge. When the triangle is too big fold it again and you can eat the French crepe with your hands.
Serve Crepes With
You can eat crepes with a lot of different toppings from sweet to savory. Take a look at all of the toppings you can add on top of your crepe.
