Easy Fiesta Ravioli

This Fiesta Ravioli dish is super easy to make. A handful of simple ingredients and you have a delicious pasta dish in less than 30 minutes.

I think pasta makes a great comfort dish. And this Easy Fiesta Ravioli is exactly that. Why easy? Well we use pre-made beef ravioli.

Using pre-made ravioli saves you a TON of time compared to making your own. This dish is so easy to make that you can make it for dinner during the week.

When it comes to the salsa, I will leave it up to you on how much heat you want it to have. I like to use mild chunky salsa when making this dish. The combination of red enchilada sauce and salsa will make this a tad on the hot side.

You can also experiment with different kinds of ravioli if you want. A nice frozen chicken ravioli would go nicely with this recipe red sauce. Possibly a nice frozen cheese ravioli too.

If you don’t have any Monterey Jack Cheese on hand, you can substitute for mozzarella cheese or any other white cheese that melts well.

Additionally if you don’t have any black olives, you can use green olives or leave them out completely! One of these days I am going to use diced green chilies to make it a truly Mexican inspired dish.

You will need the following ingredients for this Easy Fiesta Ravioli recipe (see recipe card for quantities): Frozen Beef Ravioli, Red Enchilada Sauce, Salsa, Monterey Jack Cheese and Black Olives.

  1. Cook ravioli according to package directions.
  2. While the ravioli is cooking, combine enchilada sauce and salsa in a large skillet. Cook and stir over medium heat until heated through.
  3. Drain the ravioli. Add the ravioli to the sauce and gently toss to coat. Top with cheese and olives. Cover and cook over low heat for 3 to 4 minutes or until cheese is melted.

  • 10 oz Red Enchilada Sauce
  • 8 oz Salsa
  • 2 cups Monterey Jack Cheese, shredded
  • 2 ¼ oz Black Olives, drained & sliced

  • Cook ravioli according to package directions.

    This ravioli was very tasty and I just loved it. I used green olives instead of black ones because that was all I had on hand. I will make it again using the black olives. My kids fell in love with it also.

    I made this recipe for my family and they just loved it. They are not fans of black olives but I figured I would add them because I love them. To my surprise they ate them and loved them in this recipe.
