Preparation For Vegetable Biryaniย

1. In a large bowl add 300 to 400 grams of good quality basmati rice from any popular brand and wash them thoroughly in running water.

2.ย  Then Pour 600 ml to 800 ml water into a bowl and soak the rice for up to 30 min.

3. Now to make one of the main ingredients in the veg biryani recipe , Kesar milk for this in a small bowl pour 50 ml of warm milk.

4. Then add 10 to 12 saffron or Kesar and mix with spoons and set aside this mixture for some time until the milk turns white to yellow.

Note: Now before preparing gravy for the veg biryani recipe boil 10 to 15 soya beans and 4 to 5 small size potatoes cut into two parts. After that shred the boiled soya chunk and chopped into small pieces also peel the potatoes and set them aside for later use.

1. Now for making veg biryani gravy, pour 5 to 6 tbsp oil into a pan.

3. Add whole spices 1 small bay leaf,3 to 4 green cardamom,3 to 4 cloves,1 black cardamom, 2-inch cinnamon, and 2 tsp cumin seed.

4. Now saute them in medium flame for up to 45 sec to 1 min.

5. After that add 2 to 3 medium size sliced onions.

16. Also, add green peas and gently mix with this vegetable biryani gravy for another 1 to 2 min.

19. Now cook this gravy for another 2 to 3 min on medium flame.

Cooking Biryani Rice

1. To cook the perfect veg biryani recipe, pour 1.5 lt to 2 lt water in a deep bottom then add 2 to 3 tbsp salt,3 to 4 clove,1 small bay leaf, 1-inch cinnamon,4 green cardamoms,1 black cardamom,1 mace,1 tsp cumin seed,1 tbsp oil 1 tbsp rose water,1 tbsp kewra water.

2. When the water starts boiling, add soaked rice to the pan.

3. Now cook the rice up to 70%. Itโ€™ll be better if you check the rice by pressing it with your fingers. When rice is 70% cooked drain the excess water from the rice and cook them for some time.

1. Now for making veg biryani recipe, spread oil or ghee in the bottom of the handi which prevents any stickiness of rice at the bottom of the handi.

  • ย 1 medium bay leaf or tej patta
  • ย 4 green cardamom
  • ย 4 clovesย 
  • ย 2 inch cinnamon
  • ย 1 black cardamom
  • ย 2 tsp cumin seedย 
  • ย 2 to 3 medium size onion [sliced]
  • ย 3 green chili [sliced vertically]
  • ย 1 tbsp ginger garlic paste
  • ย 3 to 4 tbsp thick yogurt curd
  • ย 2 to 3 tbsp pudina leaves [optional]
  • ย 3 to 4 tbsp coriander leaves
  • ย 2 tsp biryani masala powder
  • ย 1/4 tsp turmeric powder
  • ย 2 tsp kashmiri red chilli powder
  • ย salt to taste
  • ย 1 medium size carrots [diced]ย 
  • ย 1 medium size capsicum [cubed]
  • ย 3 tbsp french beans [chopped]
  • ย 3 tbsp green peas
  • ย 12 to 15 boiled soya chunks [chopped]
  • ย 4 to 5 boiled potatoes [cut into two pieces]

Ingredients For Preparing Rice

  • ย 1.5 -2 lt waterย 
  • ย 2 to 3 tbsp Salt
  • ย 4 to 5 green cardamom
  • ย 3 to 4 clovesย 
  • ย 1 black cardamom
  • ย 2 inch cinnamon
  • ย 1 tbsp cumin seed
  • ย 1 mace or javitri
  • ย 1 tbsp rose water
  • ย 1 tbsp keora water
  • ย 1 tbsp oil

  • ย 3 to 4 tbsp oil or desi ghee
  • ย 50 ml hot milk
  • ย 8 to 10 saffron or kesar
  • ย 1 tbsp rose water
  • ย 1 tbsp keora water

  1. To prepare the best vegetable biryani add good quality basmati rice in a large bowl then pour water, wash and soak them for up to 30 min.
  2. Now, boil soya beans and potatoes before making veg biryani.
  3. Then shred and chopped the soya chunks into small pieces and peel the potatoes for later use.
  4. Next, cooking veggies for veg biryani, pour oil into a deep pot or pan.
  5. Then add whole spices including green cardamom, black cardamom, clove, bay leaf, cinnamon, and cumin seed and saute for some time.
  6. After that add sliced onions and saute in medium flame until onions become slightly golden brown.
  7. Furthermore, add green chili, ginger-garlic paste, and saute in medium to low flame until the raw smell of ginger garlic completely disappears.
  8. Now add diced carrots, cubed capsicum, and chopped french beans, and saute in medium flame for up to 2 to 3 min.
  9. Then add boiled soya beans, and mix with other veggies for another 1 min on medium flame.
  10. Next mix boiled potatoes, green peas and gently mix with this veg biryani gravy for another 1 to 2 min.
  11. After that, pour some water, also add Kashmiri red chili powder turmeric, and salt, and cook for another 2 to 3 min on medium flame.
  12. Then, add hung curd or yogurt and mix in this veg gravy.
  13. Furthermore, pour more water and simmer this veg gravy for another 2 to 3 min.
  14. Next for cooking biryani rice for hyderabadi veg biryani pour water into a deep pan.
  15. Add salt, clove, green cardamom, black cardamom, mace, cumin seed, oil, a little drop of rose water, kewra water to enhance the flavour.
  16. When the water starts boiling, then add soaked rice.

  27. Don't open the handi for a further 20 min, if you want to avoid the direct heat of biryani you can place handi over tawa.
  28. If you want to make veg biryani in cooker then just do all of the above things like a similar pot method.
  29. Now cover the pressure cooker with a lid and cook on a medium flame for 1 whistle.
  30. After 3 to 4 min release the pressure using a spatula.
  31. When biryani is ready carefully open the lid and fluff the rice from one side with a sharp spatula and serve hot with some salad.
