I love bacon. I mean who doesn’t? So making scones with bacon and cheddar was a no brainer for me. Everything tastes better with bacon doesn’t it?

If you don’t have any cheddar cheese on hand you can simply substitute for what you got in the fridge. I must remember to try this recipe with some pepper jack cheese to give these scones a little kick. Personally I love the Extra Sharp Cheddar for this recipe.

fresh out of the oven

In an attempt to make this recipe as easy to make I recommend cutting in the butter using your food processor. This should make it easier to get the cold butter distributed as evenly and consistently as possible.

If you don’t have Buttermilk on hand, you can use this trick as a substitute: Add one tablespoon of lemon juice to a measuring cup. Add milk and fill to the 1 cup measurement line. Stir the mixture together and let sit for 5 minutes. Since this recipe calls for 1/2 cup you will need to adjust accordingly.

cultured buttermilk blend

Another option is to use a cultured buttermilk blend. All you need to do is add water. I was very skeptical at first but in a pinch it works great!

If you don’t have a food processor you can simply cut the cold butter in by hand using a couple of knives. Just make sure the butter is nice and cold!
