My ex-husband has an orchard in the back of the house. Since it is sweet cherries time over here, he brought us a bag full of amazing fruits, freshly picked and we enjoyed sweet fruits for the whole weekend:

Beautiful fruits made me postpone the dish I planned to publish since I decided to bake seasonal sweet cherry dessert instead. Making sweet cherry filling from scratch brings this dessert to a higher ground since you know exactly what you eat. I did not use store bought cherry filling or jam. The best of all is that it takes ten minutes to make it on your stove top.

 

The crust is very simple sugar cookie base I usually play with depending on the occasion. By playing, I mean, adding orange zest, cocoa powder, vanilla extract, or coconut. The basic ratio of dry and wet ingredients remains the same and it is one of evergreens in my family.

If you prefer sour cherries, you may use the same quantity but please check the amount of granulated sugar. You may want to add more.

Also, I cut nine squares but you may prefer to cut pie bars. That way, you get more pieces to enjoy. They are smaller though ….

Ingredients

  • Ingredients for sweet cherry filling:
  • 3 cups pitted sweet cherries
  • 2 Tbsp sugar
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp corn starch
  • Ingredients for cookie bars crust:
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 4 Tbsp unsalted butter, room temperature
  • 4 Tbsp sour cream
  • 3 Tbsp sugar
  • 1 egg
  • 1 Tbsp lemon zest
  • 2 Tbsp almond slices to sprinkle on the top before baking
  • Powdered sugar to dust before serving

Instructions

  1. For the filling, combine sweet cherries, sugar, lemon juice and corn starch in medium sized pot with thick bottom, boil, stirring constantly, for 5 minutes. You'll get 1 ¾ cup of cherry filling. Leave aside.

  2. On clean flat working surface, combine flour, baking powder, butter, sour cream, sugar, egg and lemon zest, using your hands.

  3. Preheat the oven to 180 C / 356 F.

  4. Cover 8 x 8 inches brownies pan with baking paper and butter it.

  5. Cut off 2/3 of cookie dough and tap into the bottom of the baking pan.

  6. Bake for 10 minutes and take it out.

  7. Pour cherry filling on the crust and arrange dough patches on the top, using 1/3 remaining dough after step 5.

  8. Sprinkle with almond slices over the top of squares and bake for 17 minutes.

  9. Take out, cool completely, cut, dust with powdered sugar and enjoy.
