Eggless Butter Cookies is a very simple cookie that any novice baker can bake by following correct measurements. Four basic ingredients is needed to relish this golden drops of melt in mouth Butter Cookies. Butter cookies are also called as Butter biscuits,Sables and Danish biscuits.
Denmark is the place of origin of these cookies. These cookies can be made without any flavours . But, I have added vanilla extract as it is my favourite. Flavours can be added as per individuals choice and can be more innovative to add unusual or weird flavours. In this recipe I have added All purpose flour to get the original taste of Danish cookies. Health freaks can substitute whole wheat flour but, I cannot promise the original taste of Danish Cookies.
I have used stainless steel open star nozzle and you can use as per your choice. After mixing cookie batter, I did not refrigerate as the batter was already thick to pipe. Though the temperature in Chennai is hot the batter consistency was maintaining throughout my four batches of baking. Four batches? I know the question is running into your minds. I used MICROWAVE CONVECTION OVEN, so it took me four batches to complete.
This is the first recipe of my Baby Blog so, I choose for a simple basic recipe which can be tried by any novice baker. Do try and let me know your feedback in comments. Let’s jump on to the recipe!
Ingredients:
All purpose flour – 1 ½ cup
Salted Butter – ⅔ cup
Icing sugar – ½ cup + 2 tablespoon
Vanilla extract – 1 tsp
Procedure:
In a dry bowl, beat salted butter and icing sugar together until fluffy.
Add few drops of Vanilla extract and whip ( I use Electric Hand Mixer) until it is well combined.
Add sifted all purpose flour into three parts and whip until it is creamy soft butter cream consistency.
Transfer the batter into a piping bag with a stainless steel open star nozzle attached and pipe on a silicon mat. Bake in a preheated microwave convection oven of 160 °C for 15 to 16 minutes until golden browned edges.
Eggless yummy crisp buttery melt in mouth Butter cookies or biscuits is ready to serve. Store it in an airtight container and serve as a snack or dessert. Perfect for Christmas Eve or New year and can gift for any occasion.

Follow the same procedure, but every oven behaves different so have an eye after 8 or 10 minutes.

Bake in a 10 min pre heated oven of 160 deg C for 16 to 18 mins. Do have an eye after 15 mins as each oven behaves different.Happy Baking!

I’ve not tried with any substitute. You can try with brown sugar and stevia. But I Don’t guarantee the same taste and texture as the original.
