Pork chops seem easy to make but they can get dry before you know it. When that is the case there is not much you can do about it.
These will never be tough but soft and moist. Fortunately, I now have my beloved crockpot and dry chops are a thing of the past.
In a slow cooker, the pork gets a chance to slowly become soft and tender.
Compared to beef it only takes about half the amount of time to cook pork in a slow cooker.
So, these pork chops do not need to be in the slow cooker all day long.

I’m gonna try this again (maybe next week), but I managed to screw it up. First off I used boneless chops (which shouldn’t make a ton of difference), but I feel like a bone in chop would be more flavorful. But I did ignore you’re comment “You do not need to sear the pork chops or anything”. I’m so used to watching Gordon Ramsay who always sears things then cooks them in the oven. He always says that the sear gives it a ton of flavor. Unfortunately I think when I seated my pork chops, I toughened them up. I followed the rest of the recipe to a T. They juices in the pot and the onion were very tasty, but my pork chops were super tough. I’ll post again when I’m more successful. Thank you for a great recipe though.
Kevin,
How unfortunate the pork chops turned out tough. Cooking in the oven and slow cooker are indeed very different. So I do hope that when you try again they will be as intended so soft and tasty.
