Macadamia Nut Encrusted Halibut

A gourmet meal for a gourmet chef, this delicious halibut recipe is surprisingly simple!

Ingredients

  

  • 1 bag kale

Fish

  • 2 halibut filets
  • ½ cup macadamia nuts
  • ½ cup panko breadcrumbs
  • 2 tbsp dried parsley
  • 1 egg beaten

Sauce

  • ½ cup heavy cream
  • ½ tsp garlic salt
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 tsp paprika
  • ½ tsp cayenne pepper

Instructions

 

  • Preheat oven to 425 degrees and roast kale with some oil and salt/pepper for about 20 minutes, flipping once. Set aside for later.
  • Meanwhile, make sauce by melting butter to a saucepan, then mixing in flour, and then the remaining ingredients. Keep warm until ready to serve.
  • In a food processor, pulse together the macadamia nuts and panko until they resemble a coarse crumbly mixture (do not over-process to the point of turning it into a sand-consistency!). Mix in dried parsley and a dash of salt/pepper and then pour mixture onto a plate or wide bowl.
  • Beat the egg into an egg wash and dip the top of the halibut in this egg wash and then dip into the macadamia nut mixture. Then you can pat extra mixture onto the top.
  • Cook in oven for 15 minutes. If the nut mixture isn’t yet golden, you can bring it to the top rack and broil for a couple minutes until you get desired golden-ness.
  • Finally, assemble by creating a bed of roasted kale, then placing halibut, then spooning over sauce.
